ASHBURN, VA — Several facilities in the Ashburn area recorded violations during health department inspections between June 28 and July 3.
COVID-19 restrictions around the state have relaxed, so health inspectors conduct most restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

- There is dried food residue on slicer after it has been washed/rinsed/sanitized. Food contact surfaces shall be properly cleaned and sanitized after using.
- Ready to eat time/temperature control for safety (TCS) foods held over 24 hours are being kept past their consume by dates labeled on the containers.

- Kitchen manager could not locate proper documentation of an employee health policy showing kitchen staff are properly trained to report symptoms of illnesses transmittable through food. Manager must document staff training.
- Employee observed not washing her hands in between tasks. Instruct food employees to clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and during food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing task.

- The hand sinks in the bathrooms not all provide a flow of water for at least 15 seconds. According to the person in charge they need to be calibrated.
- Toilet room doors are not provided with a self-closing door. Closers have not yet been installed yet.

- This facility does not have written procedures available for employees to follow when responding to vomiting or diarrheal events in the food establishment.
- The hand sink in the beverage station and on the cookline both had hand sanitizer in their soap dispensers. The hand sink at the bar did not have hand soap provided at all. Provide hand soap at all hand sinks at all times.
- The interior of all coolers in the back prep kitchen and on the cookline observed with a build up of food debris, caked on flour (pizza station), and grime. Maintain non-food contact surfaces clean to site and touch.
- Facility observed in need of a deep cleaning. Multiple areas of kitchen observed with build up of food debris and grime. Under equipment on the cookline, in the back kitchen near the mop sink, in the warewashing area and below prep tables in the prep area.

- Raw beef burgers observed cold hold at improper temperatures in the broken prep table on the line. The cooler has been replaced with a new cooler however it has not yet been removed from the line.
- The lid (outer portion) of a container of tomato soup/sauce observed heavily soiled with food debris and dark fuzzy like spots.
- Glassware not sanitized after cleaning and before use at the bar. The bar dish machine is not sanitizing. 0 ppm sanitizer recorded when tested. - No disposable towels were provided the hand washing lavatory in the kitchen. Provide paper towels by all hand sinks to allow employees dry their hand.
- Observed chicken tenders and tacos cold holding at improper temperature (48F). Time/temperature control for safety (TCS) foods must be held at 41F or below to prevent growth of harmful bacteria.
- Facility doesn't have any record of their last month ROP procedures. All records are required to be confirmed and records should be maintained for at least 6 months.

- In use utensils observed being stored in standing water. Store in-use utensils or dispensing utensils in one of the following manners: 1) In the food with their handles above the top of the food and the container. 2) In food that is not time/temperature control for safety (TCS) food with their handles above the top of the food within containers or equipment that can be closed. 3) On a clean portion of the food preparation table or cooking equipment only if the in-use utensil and the food-contact surface of the food preparation table or cooking equipment are cleaned and sanitized every 4 hours. 4) In running water of sufficient velocity to flush particulates to the drain. 5) In a clean, protected location if the utensils are used only with a food that is not TCS. 6) In a container of water if the water is maintained at a temperature of at least 135°F.
