Ashburn Health Inspections: Live Flies At Sterling Bar

The Loudoun County Health Department recorded violations at several facilities around the Ashburn area during recent inspections.

LOUDOUN COUNTY, VA — Several facilities in the Ashburn area recorded violations during health department inspections between May 24 and May 30.

Almost all COVID-19 restrictions around the state have relaxed, so health inspectors are returning to conduct some restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.

    • Date inspected: May 24
    • Total violations: 2
      • The cream cheese on the display counter was observed with an internal temperature of 60 F. The internal temperature needs to be 41 F or less if this item is held over for service for another day.
      • Manager could not provide a method to verify the food utensils are reaching 160 F in the dish machine for sanitizing. A heat sensitive strip or a high recording thermometer is required to be used in the dish machine to verify that the food contact surfaces are being sanitized.

    • Total violations: 2
      • Can opener blade have observed with accumulation of food residues. Clean food contact surfaces of equipment and utensils between and after uses to prevent cross contamination.
      • A medicine bottle observed being stored above the prep cooler. Separate the medicines from the food to prevent possible food contamination.

      • Improper methods used to thaw egg rolls. food should be thawed in the walk in cooler to prevent them from reaching above 41 degrees.

      • Hand soap observed not provided to two hand washing facilities in the kitchen. Hand soap must be provided at all hand washing lavatories to encourage proper hand washing. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands.
      • Sanitizer test strips not provided during inspection in that PIC was unable to find the sanitizer test strips during inspection.

      • Observed raw chicken hearts stored directly on top of ready to eat food in cooler. Prevent potential cross contamination by not storing raw animal foods over ready to eat foods.
      • Crab/fish/shrimp mixture noted as improperly cooled to prevent the growth of harmful bacteria. Food was taken out of cooler and reheated in microwave, then saran wrap was place over food, food is left a room temperature to cool and then placed back in cooler. This process keeps the food item at a hazardous temperature for longer than it should be to be cooled properly. Cool time/temperature control for safety (TCS) food(s) from 135F to 41F within a total of 6 hours and from 135F to 70F within 2 hours.

    • Date inspected: May 30
    • Total violations: 1
      • Refried bean and cooked pork observed in the walk in cooler at 51 degrees. According to PIC, they both were made last night. Cooked food required to be cooled from 135°F to 70°F within 2 hours and from and 135°F to 41°F within a total of 6 hours to prevent the growth of harmful bacteria. Please use an Ice bath, or a shallower container to cool down the food.

      • Handwashing facility at the bar observed with containers of lemons placed in it. Handwashing sinks shall always be readily available for washing hands.
      • Roast beef and vegetable sandwiches registered at 54°F in the reach in refrigerator. As per the PIC said sandwiches were brought from the United Polaris kitchen about earlier.

      • Front hand sink is unusable and in disrepair. Water has been turned off.
      • Observed all items in front cooler cold holding at improper temperature (cheese 52, corn 65, lettuce 58F). Time/temperature control for safety (TCS) foods must be held at 41F or below to prevent growth of harmful bacteria.

      • A written process or procedure to properly clean and sanitize vomit or diarrheal events is not present at the facility. A written policy or procedure that employees have access to and can follow to properly clean up these incidents must be available. EHS printed the NOROVIRUS clean-up work sheet and gave to the manager. Corrected.
      • Pre portioned salads were observed with lettuce that appeared to be changing to a pink/rust color. No date marking was observed on the salads. Time/temperature control for safety foods (TCS) that are ready-to-eat (RTE) that are kept over 24 hours must have the date that the food was opened/packaged/prepared or a discard date not to exceed 7 days from the date that the food item was opened/prepared/packaged.       • Observed raw shell eggs stored over raw bacon in cooler. Prevent potential cross contamination by not storing raw animal foods over ready to eat foods.
      • There is no available Chlorine sanitizer in dish machine. Sanitizer is reading 0 parts per million. Maintain 50-100 parts per million in a dish machine using Chlorine sanitizer for proper sanitization.
      • Observed saute mushroom and onion hot holding at improper temperature (F). Time/temperature control for safety (TCS) foods must be hot held at 135F or above to prevent growth of harmful bacteria.
      • Observed line cooler cold holding food such as beef patty, and chicken patty at improper temperature (F). Time/temperature control for safety (TCS) foods must be held at 41F or below to prevent growth of harmful bacteria.
      • Ice machine observed with accumulation of pink/black residues.

      • Handwashing facility in front food prep/service area observed being used for the purpose of dumping drinks in that soda and ice observed in said sink.

      • Sliced turkey and pastrami registered at 46°F in the reach in refrigerator in kitchen. Said unit registered operating at 45°F. As per the PIC said unit was frequently being opened in morning.
      • Raw beef burger patties registered at 45°F in low boy drawer refrigeration unit. Said unit operating adequately.
      • Two live fruit flies observed in bar area.
  • & Pizza (C Terminal), 1 Saarinen Cir. Dulles, VA 20166
    • Date inspected: May 30
    • Total violations: 5
      • Person in charge (PIC) must be aware and inform all employees of their responsibility in reporting symptoms or diagnosis of diseases transmissible through food. Manager was unable to provide a signed copies of employee health reporting agreement.
      • Hand washing facility in front food prep area observed without soap.
      • Raw shell eggs registered at 47°F in top section of pizza topping refrigerator. Said section of the unit observed open and next to the pizza oven.
      • There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solutions for bar dishwasher.
      • Facility observed dirty with many empty boxes and food debris on floor. As per the PIC, the facility had just received the delivery.

    • Total violations: 3
      • Hand washing facility in the bar area observed without soap for washing hands.
      • Sanitizer test strips for measure the concentration of sanitizer in chemical dishwasher at the bar not provided.
      • Inner panel of ice machine observed with accumulation of mildew. Said ice used for consumption by adding in drinks.
