Ashburn Health Inspections: Mediterranean Breeze, Manhattan Pizza
The Loudoun County Health Department recorded violations at several restaurants around Ashburn during recent restaurant inspections.
ASHBURN, VA — The Loudoun County Health Department recorded violations at several restaurants in the Ashburn area during inspections between July 27 and Aug. 2.
Most COVID-19 restrictions around the state have relaxed, so health inspectors are returning to conduct some restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

- The hand sink at the three basin sink in the kitchen is blocked by a large piece of equipment that is not easily moveable (Stand alone mixer), obstructing use of the hand sink.
- Raw chicken was observed stored over raw goat and raw beef that were marinating in the walk-in cooler.
- No date marking of foods is being performed at the facility.
- 2 containers of cooked food, and a bag of onions were found stored in the walk-in cooler on the floor.

- Observed visible white light shining under door in back allowing for possible entry of pests.
- Observed In Use knives stored in between prep tables. Observed In Use Tongs being stored on handle of oven with tongs in contact with surface of oven, which is not sanitized at appropriate frequency.

- The back 2 door stand up cooler is not working properly. TCS (time temperature control for safety) foods are holding at improper temperatures in the cooler (cut lettuce 50F, Cheese sauce 50F uncooked bacon 50F) . Management is aware of the issue and was attempting to cool the ambient air temperature by placing a container of ice at the bottom of the cooler.

- Hand sink in kitchen was blocked by a container of chips.
- Observed cooked potatoes uncovered in 2 door cooler. In walk in raw bacon stored over cooked gyro meat.
- Observed dishwasher sanitizer 0 ppm.
- Observed raw chicken 47F in 1 door reach in cooler over night at an improper cold holding temperature.
- Observed no asterisk on the menu to indicate what food item are raw or undercooked for Greek burger, house balsamic vinaigrette is made with raw eggs and eggs on the breakfast menu are under cooked.
- Observed food and food contact surfaces (pizza boxes, potatoes soaking in a container, raw chicken).
- Observed cutting board on prep cooler with heavy scratches and scaring.
- Observed both prep coolers, prep table in back, and ice machine guard with build up dirt and grime.
- Observed the wall and floors by dishwasher and 3 compartment sink in need of cleaning.

- Butter chicken and butter chicken sauce held in the low boy cooler are not date marked for disposition to reflect a maximum holding time of 7 days from the day that it was prepared.
- Upon review of the menu it was observed that several menu items are not properly marked with a disclosure (**) such as brunch items with poached eggs (served undercooked).
- Facility does not have sanitizer test strips to test both the dish machine sanitizer and the quat sanitizer at the three compartment sink.
