The Loudoun County Health Department recorded violations at several facilities around the Ashburn area during recent inspections.
ASHBURN, VA — Several facilities in the Ashburn area recorded violations during health department inspections between June 7 and June 13.
Almost all COVID-19 restrictions around the state have relaxed, so health inspectors conduct most restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

- Kadahi sauce noted as improperly cooled to prevent the growth of harmful bacteria. Sauce was made at 7pm last night and has been cooling for 17 hours where it is currently still 68F. - Facility doesn't have a test strip for the dish machines in the kitchen and the bar. Obtain a chlorine sanitizer test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.

Store raw animal foods in a manner that prevents cross contamination. Employee relocated food to protect from cross contamination.
- Ready to eat time/temperature control for safety (TCS) foods (Lentil soup) held over 24 hours are being kept past their consume by dates labeled on the containers (6/7). Ready to eat TCS foods must be discarded after the consume date.
- There is no Quat chemical sanitizing test kit present to ensure the chemical sanitizing solution used is at the proper concentration.
- The nonfood-contact surface of wine bottle opener is not cleaned at an appropriate frequency.

- A container of raw chicken was observed stored over a container of raw, marinating beef skewers. Food shall be protected from cross-contamination by separating raw animal proteins from one another and arranging them from lowest required internal cook temperature, to highest. Container of raw chicken was moved to the bottom shelf on the opposite side of the reach-in cooler. Corrected.
- Several ready to eat foods (RTE) observed with no date marking - Tamales, corn salad, cooked chicken, cooked potatoes, cut tomatoes. When keeping time/temperature for safety foods (TCS) that are ready to eat (RTE) for longer than 24 hours, a date that the food item was opened/prepared or a discard date not to exceed 7 days from the date that the food item was opened/prepared must be labeled on the food item or it's container/packaging. Date mark all TCS/RTE foods that are stored/kept longer than 24 hours.
- A container filled with Tilapia filets in reduced oxygen packaging (ROP) was found thawing in the reach-in cooler without the introduction of Oxygen. When thawing fish in ROP, a small slit, cut, or other method to introduce oxygen into the packaging BEFORE thawing must be performed to eliminate the risk of harmful anaerobic bacteria multiplying during the thawing process. PIC slit open the ROP. Corrected.
- Sanitizing strips that are used to monitor the chlorine sanitizer at the three basin sink and the low temperature dish machine have been compromised and are no longer viable. Testing strips or similar device must be provided and in working order so that the concentration levels of sanitizer can be monitored. EHS gave chlorine test strips to use until more can be ordered. Corrected.
- EHS found that the facility does not have hot water and that per the owner, the hot water heater needs to be replaced and is not repairable. Hot water generation and distribution systems shall meet peak hot water demands throughout the food establishment. Replace/Replace the water heater that provides sufficient hot water throughout the facility.

- Cooked grilled chicken was found hot holding with an internal temperature of 118F. The chicken was stored in the hot holding unit for approximately 45 minutes. Food worker corrected by reheating the chicken to an internal temperature of 190F within 10 minutes.

- Observed raw ground beef stored above raw fish inside the walkin cooler. Foods shall be protected from cross contamination by storing and separating raw animal foods based on minimum cooking temperatures. Food worker corrected by placing the raw fish above the raw ground beef.
- The slicer and can opener were observed with food residue. Food contact surfaces are to be clean to sight and touch. Corrected by washing, rinsing and sanitizing the slicer and can opener.
- Three cooked whole turkey roasts found inside the walkin cooler with an internal temperature of 53F, 48F, and 50F respectively. The roasts were placed in the walkin cooler from the previous night. Foods cooled are required to reach 41F within a total of six hours. Recommended methods include separating into smaller portions. Corrected by voluntarily discarding the turkey roasts.

- Shellstock tags observed without a last date sold of the shellstock. Facility should date when the last shellstock from the container is sold or served shall be recorded on the tag or label.
- There is no available Chlorine sanitizer in bar dish machine. Sanitizer is reading 0 parts per million. Maintain 50-100 parts per million in a dish machine using Chlorine sanitizer for proper sanitization.
- Observed gravy hot holding at improper temperature (75F). Time/temperature control for safety (TCS) foods must be hot held at 135F or above to prevent growth of harmful bacteria.
- Observed scallops, calamari, salmon holding at improper temperature in the prep cooler on the line above 47 degrees F). Time/temperature control for safety (TCS) foods must be held at 41F or below to prevent growth of harmful bacteria.
- Chemical spray bottle observed without the proper labeling. All working containers of toxic materials should have a label with the common name of the material in it.
- Many flies observed throughout the kitchen area. Routinely inspect incoming shipments. Insects and other pests are capable of transmitting disease to man by contaminating food and food-contact surfaces.

- A hand sink located at the bar inside was observed with a container stored within the basin. Hand sinks must be unobstructed and available for use by employees at all times. Hand sinks must also have signage reminding employees to wash their hands, soap and a hand drying provision. EHS recommends designating one hand sink behind the bar that is set for hand washing only. Person in charge (PIC) removed the container from the hand sink.
- A squirt container with a clear liquid was found without any identifying information, stored with another food item in a well at the outside bar. Except for containers holding food that can be readily identified and unmistakably recognized, the common name of the food or ingredient must be identified. Contents was identified as simple Syrup - Label this container to identify simple syrup.
