Ashburn Health Inspections: Raw Meat Stored In Plastic Grocery Bags

The Loudoun County Health Department recorded violations at several facilities around the Ashburn area during recent inspections.

ASHBURN, VA — Several facilities in the Ashburn area recorded violations during health department inspections between June 14 and June 20.

COVID-19 restrictions around the state have relaxed, so health inspectors conduct most restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.

  • Tamarind Indian Cuisine, 46300 Potomac Run Plaza #120 Sterling, VA 20164
    • Date inspected: June 14
    • Total violations: 5
      • Bowl used as scoop is stored in RTE (Ready to Eat) onions in walkin cooler. Must have scoop with handle to prevent contamination of RTE foods.
      • Hand sink has not been repaired. No handwashing sink turned on and available to use in kitchen. Water under sink must be turned on and remain on as this is the only hand sink.
      • Observed several food items stored uncovered in cooler. Prevent potential cross contamination by covering foods.
      • Observed time/temperature control for safety foods (TCS) not properly dated for disposition. Ready to eat TCS foods held over 24 hours must be date marked with either made on date or date the food item must be consumed not to exceed 7 days.
      • Ready to eat time/temperature control for safety (TCS) foods held over 24 hours are being kept past their consume by dates which is 7 days maximum from the date made. These foods are as follows: chicken 6/5, cauliflower mix 6/6, milk desert 6/4.
  • Frito Chicken, 44650 Waxpool Rd #100 Ashburn, VA 20147
    • Date inspected: June 14
    • Total violations: 3
      • Employee observed not sanitizing the kitchen utensils properly. washed/rinsed food containers should be placed in the quat sanitizer for at least 60 seconds to be sanitized.
      • Observed rice hot holding at improper temperature (F). Time/temperature control for safety (TCS) foods must be hot held at 135F or above to prevent growth of harmful bacteria.
      • Ready to eat time/temperature control for safety (TCS) foods held over 24 hours are being kept past their consume by dates labeled on the containers. These foods are as follows: bbq chicken.
  • Ashburn Kabob, 42882 Truro Parish Dr #101 Ashburn, VA 20148
    • Date inspected: June 14
    • Total violations: 5
      • Employee observed drinking his coffee while on the line cooking.
      • There are no paper towels at the hand sink to dry hands. There must be paper towels available at hand sink for proper hand drying at all times.
      • There is no available Chlorine sanitizer in dish machine. Sanitizer is reading 0 parts per million. Maintain 50-100 parts per million in a dish machine using Chlorine sanitizer for proper sanitization.
      • Small plastic bowl stored in the bucket of onion sauce in walk in cooler.
      • Grocery plastic bags observed being used to store raw ground beef/chicken.
  • Casa Tequila Bar & Grill, 7 Pidgeon Hill Dr Sterling, VA 20165
    • Date inspected: June 14
    • Total violations: 2
      • Two (2) knives found stored in the hand washing sink located to the right of the cook line. Hand washing sinks shall be used for hand washing only and must not be blocked or otherwise impede employees from washing their hands. PIC removed the knives to the dish washing area to be washed.
      • No hand drying provision was found at the hand washing sink behind the bar. All hand washing sinks must have proper hand drying provisions provided. Person in charge (PIC) provided paper hand towels to the hand washing sink.
  • Rupa Vira's The Signature, 21760 Beaumeade Circle Ste 120 Ashburn, VA 20147
    • Date inspected: June 16
    • Total violations: 2
      • Observed food cold holding at improper temperature in the walk in cooler (F). Time/temperature control for safety (TCS) foods must be held at 41F or below to prevent growth of harmful bacteria. According to the person in charge, the food was placed outside during the rush hour.
      • Non food contact surfaces of ice machine observed with accumulation of black residues.
  • Subway #15152, 44110 Ashburn Village Blvd #188 Ashburn, VA 20147
    • Date inspected: June 16
    • Total violations: 1
      • Observed quat sanitizer at 3 compartment sink at 0ppm. Quat sanitizer shall be made per manufactures instructions and tested to ensure solution is present and at proper concentration.

    • Date inspected: June 16
    • Total violations: 3
      • The PIC could not show all employees are informed of their responsibility to report illnesses as they relate to food. No From 1b available for all employees. Employes shall be informed in a verifiable manner of their responsibility to report illnesses related to foodborne illness to their manager.
      • Observed quat sanitizer solution concentration at two buckets below proper proper range indicated on package label at 200-400ppm. Quat tested at 100ppm.
      • Observed ceiling leak in dining room. The physical shall be maintained in good repair, water droplets and bucket on floor are tripping hazards.

    • Total violations: 2
      • The following food item (Sushi Rice) for which time rather than temperature is used as a control is not marked or otherwise identified to indicate the time that is 4 hours past the point in time when the food is removed from temperature control.
      • Vacuum packaged tuna observed not thawed properly. They were thawing in the vacuum packaging. Remove fish that has been packaged in a reduced oxygen environment prior to thawing in a refrigerator that maintains food temperature at 41 F or less, or immediately upon completion of thawing if thawed by completely submerging the package(s) under running water at a temperature of 70 F for a time period that doesn't allow the thawed portions of the fish to exceed 41 F for more that 4 hours including the time to cool back down to 41 F in the refrigerator if not immediately cooked.

    • Date inspected: June 20
    • Total violations: 4
      • Employee observed not washing his hands after touching his phone. ALL food employees shall be washing their hands frequently to keep the hands and exposed portions of the arms clean and sanitary.
      • Observed sanitizer buckets of chlorine solution being too strong. Use chemical sanitizers that meet the requirements of 40 CFR 180.940 or 40 CFR 180.2020 when applying to food contact surfaces.
      • Dish machine isn't operating properly. Repair, replace, and/or maintain the calibration of gauges for accuracy and function in the intended range of use.
      • Multiple kitchen floor tiles are broken. Wall, floor, and ceiling surfaces shall be smooth, durable, easily cleanable, and non-absorbent for areas subject to moisture such as food preparation areas, walk-in refrigerators, warewashing areas, and toilet rooms.

    • Date inspected: June 20
    • Total violations: 1
      • Observed plumbing under the hand washing sink by the warewashing area to be leaking when turned on, resulting in lack of hand washing.
  • Lima de Vera Restobar, 20921 Davenport Dr 134-135 Sterling, VA 20165
    • Date inspected: June 14
    • Total violations: 5
      • No hand drying provision was found at the hand washing sink at the dessert station, or at the hand washing sink behind the bar. All hand washing sinks must be equipped with a hand drying provision to ensure hands are properly dried. Person in charge supplied paper towels at both hand washing sinks.
      • 2, 1 gallon jugs of whole milk was found in the walk-in cooler, both with a sell by date of 6/7/2023. Milk products must be obtained from Grade A sources. Milk products are no longer Grade A once the printed sell by date on the container expires. PIC voluntarily discarded both containers of milk.
      • Marinating raw chicken was observed stored over ready to eat (RTE) cooked duck. Food must be protected from cross contamination by separating raw animal proteins from RTE foods and arranging them in a way that eliminates the risk of cross contamination. PIC moved the raw chicken to the bottom shelf, below the RTE cooked duck.
      • When tested by the EHS, both the low temperature dish machines (Kitchen & Bar) had zero sanitizer reaching the food contact surfaces. All food contact surfaces of utensils, dishes, equipment etc. must be sanitized before use, after cleaning. EHS was able to identify that the sanitizer container for the dish machine in the kitchen was empty. Once the container was replaced, EHS demonstrated to the employees how to prime the machine to ensure that sanitizer is successfully flowing. A test run confirmed a sanitizing reading of 50ppm. The dish machine behind the bar was not able to be corrected during the inspection. EHS directed that all drinkware/utensils be washed, rinsed sanitized either by the three basin sink behind the bar, or at the dish machine in the kitchen until the repair is made.
      • A can of black enamel spray paint was found stored with drink shakers behind the bar. Poisonous or toxic materials shall be stored so they cannot contaminate food, equipment, utensils etc. PIC removed the can of spray paint to an area designated for chemicals.
