Ashburn Health Inspections: Red Lobster, Vocelli's

The Loudoun County Health Department recorded violations at several facilities around the Ashburn area during recent inspections.

ASHBURN, VA — Several facilities in the Ashburn area recorded violations during health department inspections between July 19 and July 25.

COVID-19 restrictions around the state have relaxed, so health inspectors conduct most restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.

      • Ready to eat time/temperature control for safety (TCS) foods Coleslaw held over 24 hours are being kept past their consume by dates labeled on the containers.
      • Vacuum packaged salmon observed not thawed properly. Remove fish that has been packaged in a reduced oxygen package from the reduced oxygen environment prior to thawing in a refrigerator that maintains food temperature at 41°F or less, or immediately upon completion of thawing if thawed by completely submerging the package(s) under running water at a temperature of 70°F for a time period that doesn't allow the thawed portions of the fish to exceed 41°F for more that 4 hours including the time to cool back down to 41°F in the refrigerator if not immediately cooked.

      • Observed improper cold holding temperatures: Leafy greens were delivered on 7/20 at 7:30-8am temperature taken at approximately 10:50-11:10 am in the walk in cooler (spinach multiple bags (57F, 51F, 49F, 50F, 52F) (super greens 48F, 49F, 48F) (arugula 53F, 54F), Roman lettuce (50F, 52F, 48F, 49F, 51F, 52F, 51F, 54F, 53F, 54F), and splendid greens (54F, 50F, 53F, 53F, 50F, 51F, 52F, 49F, 48F, 49F, 49F, 47F, 48F, 46F, 49F, 46F, 49F, 49F). These food items were voluntarily discarded do to being out of temperature for more that 4 hours. Person in charge stated that there was no temperatures taken at time of delivery. EHS re-checked the temperature at 11:45-11:55 am of each leafy green bag after corrective action was taken (ice bath and separated in walk in cooler and none of the bags of leafy green was at 41F or below. Leafy greens were voluntarily discarded.

      • Observed hot dog in the tall reach in cooler cold holding at improper temperature (F). Time/temperature control for safety (TCS) foods must be held at 41F or below to prevent growth of harmful bacteria.
      • Sanitizer solution at the three-compartment sink observed to be too strong. Quat Sanitizer needs to be between 15-400ppm.

      • Observed raw chicken stored over ready to eat food in cooler. Prevent potential cross contamination by not storing raw animal foods over ready to eat foods.
      • Sanitizer bucket stored on the kitchen counter close to the ready to eat food.
      • Plastic bowl stored in the rice warmer.

    • Total violations: 5
      • Observed no paper towels at hand sink by 3 compartment sink. Paper towels should available for employees use at all times.
      • Observed no hand soap at hand sink by 3 compartment sink. Hand soap should be available for employees use at all times.
      • Observed blade of can opener with coating peeling off at the tip of the blade and blade of the slicer had food food debris. Food contact surface shall be clean to sight and touch.
      • Observed prep cooler lids and door with an accumulation of food residue. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
      • Observed a large quantity of employee food items being stored in a variety of places in the walk in cooler.

      • Observed the chlorine sanitizer of chemical dishwasher at 0 ppm. Chlorine sanitizer should test between 50-100 ppm.
      • Observed improper cold holding temperature red salsa 45F at to go. Food held cold should be maintained at 41F or below.
      • Observed cut leafy greens 45-50F cooling with a lid tightly on the container. When cooling foods should be loosely covered or uncover.

      • Uncovered egg was observed on the kitchen table. Foods shall be protected from contamination by being stored in packages, covered containers or wrappings unless being cooled.
      • Sanitizer at the three-compartment sink appeared to be too strong. (test strip color turned blue).

      • Kitchen manager could not locate proper documentation of an employee health policy showing kitchen staff are properly trained to report symptoms of illnesses transmittable through food. Manager must document staff training.
      • The food-contact surface of the can opener is not cleaned at an appropriate frequency.
      • Cook temperature of the fish, cooked from raw, was 140. Raw fish must be cooked to an internal temperature of 145F for 15 seconds before it may be offered for consumption.
      • The walk-in cooler isn't closing properly.
      • An irreversible registering temperature indicator was not provided for the hot water mechanical warewashing operation.
      • The nonfood-contact surfaces of the ice machine were observed soiled with an accumulation of black residues.
