Ashburn Health Inspections: Violations At 31 Facilities
The Loudoun County Health Department recorded violations at several facilities around Ashburn and Sterling during recent inspections.
ASHBURN, VA — Several facilities in the Ashburn area recorded violations during health department inspections between Dec. 14 and Dec. 20.
Most COVID-19 restrictions around the state have relaxed, so health inspectors are returning to conduct some restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.

- The handwashing station at the kitchen is being used for purposes other than washing hands in that Hand washing sink observed with bowls stored in it.
- Chemical dishwasher at the bar observed not sanitizing after wash and rinse cycle.
- Temperature control for safety (TCS) food items not held at or below 41°F in that cut leafy greens and cut tomatoes registered at 54°F in three door low boy refrigerator in kitchen. Said unit registered operating at 60°F.
- Handwashing facility in front of the dishwashing area in kitchen observed with low pressure for cold water.

- Marinated raw chicken was observed in the drawer refrigerator below the stove cold holding the food at 46-degree Fahrenheit.
- Sanitizer solution in the sanitizer bucket observed to be too strong.
- Frozen salmon observed thawing in the sealed package in the drawer cooler.
- Sanitizer solution and the detergent were out at the three basins sink and the person in charge replaced the empty containers with the new one.
- Facility doesn't have the Quat sanitizer test strip sanitizer to check the three basins sink solution.

- Observed the 2 DR Prep Top at the Front to have a maximum ambient temperature of 49F.
- Quaternary ammonia test strips for testing sanitizer at 3 compartment sink not available.
- Observed the following areas to have buildup of debris and mold like substances in need of cleaning: The floor and walls underneath the 3 VAT sink, the floors in the back bar area, the walls by the Walk in Units, The floor of the dry storage area where sodas are mixed, and the interior of the beer Walk In.

- Temperature control for safety (TCS) food items, sausages patties registered at 50°F in the top section of two door low boy refrigeration unit in front food prep area near to the oven.
- In-use utensils improperly stored between use in that utensils observed stored in standing water in dipper well in front food prep area.

- Employee/PIC does not have a verifiable means to show certified food protection manager (ServSafe) certificate. There are 4 CFM certificates displayed: 3 from "Global Food safety Training Inc" which is not an approved ANSI-CFP Accredited Programs certification from the approved list on loudoun.gov. Other Certification is ORS, expired 2/5/2022 (Gin up Kim F-12468)
- Observed Hand Washing sink near back door to be used to store a brush.
- Observed the Hand Sink by the back door to be broken. MGMT indicated that prep sink was being used to wash hands in the meantime and that repair has been scheduled for the sink.
- Observed bottle of RAID Ant and Roach labeled for indoor household use only in back of house.
- Observed the ambient air thermometer in the 2 dr prep top to be broken.
- Observed Tongs stored on top of rice cooker. Observed Pepper/Cucumber peelers stored in stagnant, ambient temperature water.
- Observed 2 Wet mops stored in 2 standard white bucket near the back door.

- Raw shell eggs were found stored directly on top of fresh vegetables in the reach-in cooler.
- Personal items (cell phone, jackets, ipad) observed stored with to go boxes and hanging from shelf where bread loaves are stored. Personal items must be kept in areas that are designated for employees and separated from food, food contact surfaces, equipment and to-go items. PIC removed employee items to the back office area.
- Containers originally intended for tzatziki sauce are being re-used within the facility for food storage. Single use containers are not to be re-used. Discontinue use of these containers for food storage.

- Bottles of cleaners observed stored with clean utensils and prep tables. Cleaners need to be stored separately from food, clean equipment, clean utensils.
- Equipment is not being sanitized properly. The sanitizer was <200ppm QUAT sanitizer, as required by the product instructions. Observed 100ppm.
- Management, food employees or conditional employees were not aware or informed of their responsibilities in reporting symptoms or diagnosis of diseases transmissible through food. A Verifiable employee health reporting policy is required.

- Raw chicken observed stored over raw hamburger and raw lamb. Person in charge (PIC) removed Chicken to separate cooler.
- A spray bottle containing a yellow cleaning material and a spray bottle containing water was observed with no label. Toxic materials taken from bulk supplies shall have the common name labeled on the working container. PIC labeled these containers so that they are easily identifiable.

- Container of raw lamb chops observed improperly stored over ready to eat foods (cut cucumbers) in the reach in cooler in the upstairs kitchen.
- A container of alfredo sauce observed held longer than the maximum 7 days in the cooler (41F or below). The container had a date mark sticker from 12/7/2022. The sauce was held for 10 days.
- This facility does have written procedures in place for utilizing time as a public health control, however food employees are not tracking the time the TCS foods are being held under time control. Time control logs are not filled out, time stamps or timers are also not used.
- Seared tuna (served undercooked) is currently offered on the A la Cart first class menu. A consumer advisory disclosing and reminding customers the risk of eating under cooked seafood is not printed on the menu.
- Facility has sneeze guards throughout the self service food area however, there are multiple open containers of food outside of the sneeze guard coverage area. Foods outside of sneeze guard: - Sliced ham - crackers, cookies - condiments for soup.
- Knives observed improperly stored in a bucket of sanitizer in between uses in the downstairs prep kitchen.

- Employee coffee cup observed with liquid in it with a donut sitting on top of cup sitting on food prep table next to cutting board being used to cut garlic.
- Hand soap dispenser was observed not working at hand sink located between the cook line and 3 vat sink.
- Manager was asked to check the sanitizer concentration at the dish machine and when checked, there was no sanitizer reregistering on the test strip. The dish machine was not dispensing chlorine sanitizer.
- Manager could not locate a food thermometer to check the internal temperature of food.
- Food utensils were observed stored in water at room temperature on the cook line and at hot holding area.
- Single-service plastic forks were observed dispensed so that the food- or lip-contact surfaces were in stored in up position with the handles down and are not protected from contamination of the public touching the food contact surfaces with their bare hands to pick up a clean fork.
