Ashburn Restaurant Inspections: Dead Fruit Flies In Liquor Bottles, No Soap At Sinks
The Loudoun County Health Department inspected a number of restaurants around Ashburn and Sterling, including 25 that had violations.
ASHBURN, VA — Officials from the Loudoun County Health Department inspect several restaurants around Dulles, Ashburn, and Sterling from Sept. 22 to Sept. 28, including more than two dozen locations with violations.
As coronavirus restrictions continue to fluctuate, health inspectors are returning to conduct restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.

- Cooked chicken wings, sliced chicken breast, and cut tomatoes were found with no date labels.
- Chlorine sanitizer found in a wiping bucket was measured @ 400+PPM.
- Marinara sauce is being prepared from ambient room temperature canned tomatoes in large batches, mixed in a 55-gallon tub, and stored in the walk-in cooler. This method is not facilitating proper cooling of the marinara sauce.

- Ceviche (with cooked shrimp) in the walk in refrigerator observed dated to be held for two weeks. Said food had been held for more than 7 days. Cooked, prepared food can only be held for 7 days.
- Rice scoops observed stored in standing water at room temperature. Rice scoop observed placed on dirty surface, on top of rice warmer with accumulation of dust.
- Sanitizer test strips were not available to test the concentration of quaternary ammonia.

- Food establishment is using reduced oxygen packaging (ROP) method without a HACCP plan that does that would describe how the package shall be labeled. Observed sweet sausage recipe out on prep counter with chopped garlic and onion. Heavy whipping cream and raw ground sausage in ROP labeled "pizza" was observed on the same prep counter. Raw ground sausage in ROP on prep counter was tempt at 60F. After discussing with the PIC daily ROP tasks related to menu items for the restaurant, EHS also observed the following: -3 ROP raw ground sausage with the label, "pizza" at walk-in freezer. -2 ROP raw ground sausage with no label @ blast chiller. -10 ROP raw ground burger patties with no label @ walk-in freezer. -1 ROP raw ground burger patties with 9/28 @ prep cooler 3. -1 ROP cooked brisket beef with no label @ walk-cooler. -2 ROP cooked pork loins with 7/30 date @ walk-freezer.
- Observed the following ready-to-eat, potentially hazardous food being held in a container or package that does not bear a date or day: pork ribs MOD yesterday, meatballs MOD Saturday and whole chickens in blast chiller MOD yesterday. The person-in-charge stated the days that the food items were prepared to EHS.
- Raw shell eggs in walk in cooler above blue cheese dressing and ROP cooked brisket. -Cooked brisket at prep cooler 3 under raw shrimp and raw teriyaki. -Raw shell eggs in prep cooler 3 above cut celery sticks.
- Observed 3 pint sized buttermilk containers with used by date of 9/15 that was located in the walk in cooler.
