Ashburn Restaurant Inspections: 9 Restaurants With Violations
The Loudoun County Health Department found violations at nine restaurants in the Ashburn area during recent inspections.
ASHBURN, VA — Officials from the Loudoun County Health Department inspected multiple restaurants across the Ashburn and Sterling area from Aug. 26 to Aug. 31, including several locations with violations.
As coronavirus restrictions continue to fluctuate, health inspectors are returning to conduct restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.

- Date inspected: Aug. 26
- Total violations: 2
- Milk in pitchers were at a temperature of 48 F, 51 F and pasteurized liquid eggs 45 F.
- The prepared ready-to-eat (RTE) cube cheddar cheese (8/18) and marinara (8/9) in the refrigeration unit was not discarded by the "consume by" date.
- Kung Fu Tea, 46950 Community Plaza #104 Sterling, VA 20164
- Date inspected: Aug. 26
- Total violations: 4
- Single-use bags (used for tea) used for more than one task, are damaged, soiled, or saved for re-use. Milk power setting on counter not covered.
- Tapioca with honey 113 F, and tapioca with brown sugar 112 F. The time place in hot holding units were 11 am.
- Brown sugar syrup, magic gem coffee, and single use items are store under sewer lines.
- The hot holding unit that was holding the tapioca with brown sugar was not heating the tapioca to 135 F.
- Ashby Ponds Potomac Black Rock Bistro/ Hamilton Way, 44815 Audubon Sq Ashburn, VA 20147
- Date inspected: Aug. 27
- Total violations: 2
- High temperature dishwasher is not reaching sanitizing temperatures. The plate registering thermometer is only reaching 157F and needs to reach 160F.
- Several items observed cold holding at improper temperatures. Risotto and lump crab meat observed >41F. These items are stored on top of containers in the top shelf of prep cooler.
- Good Eats Emporium / Taqueria Loca / Best Buns / Stupid Good BBQ / Good Eats Burgers & Wings / Coastal Beach Shack, 45990 Waterview Plaza Sterling, VA 20166

- Total violations: 1
- Observed prep unit 2 not maintaining TCS foods at 41F or below at follow-up inspection. Walk in cooler, prep unit 1 and mini prep unit temperatures are within range.
- El Rinconcito del Sabor, 410 S. Sterling Blvd Sterling, VA 20164
- Date inspected: Aug. 30
- Total violations: 10
- Observed Tongs on top of Hot Holding Unit, Tongs on oven against unsanitized areas, Tongs on unsanitized cart, cups in buckets of sugar and beans. Ice scoop in bins with handle in ice.
- Observed Curtidos and Shredded Romaine Lettuce to be overstuffed in units preventing proper cooling.
- Concentration of bleach sanitizer was found to be above range. The bleach is not being used in accordance with law or the manufacturer's use directions.
- Raw Shell non pasteurized eggs were found to be stored at room temperature under shelf across from grill for 5 hours.
- Observed Curtido to be stored at 64F. Cooked Chicken at 47F, Cooked Ham at 46F. Cooked Short Ribs 48, Cooked Beans at 74 out in the open.
- Observed Cooked Chorizos at 74 uncovered under grill.
- Observed Several items in walkin to be cold holding and uncovered including: Cheese, Pupusa mix.
- Observed Hand sinks to be blocked by buckets and containing wash cloths.
- Upon arrival the soap dispenser at the hand sink was observed to be empty.
- Upon arrival to restaurant there was no Certified Food Manager available
- Vocelli Pizza, 46005 Regal Plaza #130 Sterling, VA 20165
- Date inspected: Aug. 31
- Total violations: 8
- There is no manager on duty. EHS observed two employees, neither with managerial knowledge or control of food preparation.
- There is no certified food protection manager on site. The owner does have a certificate but is not able to be reached.
- The facility does not have verifiable means of an employee health reporting policy.
- There are no hand towels at either hand washing sink and no soap at the one located by the three basin sink.
- Raw shell eggs were observed stored over ready-to-eat dressings and toppings.
- The sanitizer at the three basin sink is 0ppm quat. The employee did not know how to make new sanitizer or how to test the concentration. The employee states that the last time the sanitizer was made, was the morning of 8/29/2021.
- No Date markings were found on any products within the facility.
- A can of opened paint was found stored above/with pizza boxes.

- Total violations: 1
- 7 milk jugs in the reach-in cooler are past their expiration date (8/30/2021).
- Paisanos Ashburn, 44260 Ice Rink Plaza #109 Ashburn, VA 20147

- Total violations: 4
- Observed raw shell eggs and raw chicken being stored next to RTE pickles and cooked noodles. in the walk in cooler.
- Observed shredded mozzarella cheese at 45 F.
- Observed no testing strips for the chlorine dish machine.
- Observed mops not being hung in a way that will allow them to air-dry.
- Cooper’s Hawk Winery & Restaurant, 19870 Belmont Chase Blvd. Ashburn, VA 20147
- Date inspected: Aug. 31
- Total violations: 3
- Observed lemon beureblane on steam table at temperature of 108.
- Observed shredded cheddar at a temperature of 47 F.
- Observed sliced tomatoes 47 F and pico de gallo 69 F cooling in prep cooler.
