Ashburn Restaurant Inspections: Bourbon Bayou, Potbelly's
The Loudoun County Health Department inspected several restaurants around Ashburn and Sterling, including several with violations.
ASHBURN, VA — Several restaurants around Ashburn, Dulles, and Sterling were cited with violations during recent inspections by the Loudoun County Health Department. The cited locations were listed in the most recently published inspections, which occurred between Jan. 26 and Feb. 1.
As coronavirus restrictions continue to fluctuate, health inspectors are returning to conduct some restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

- A review of the menu with the foodservice operator indicates that there is no consumer advisory for the Whiffletree Farm Grass Fed Drunken Ribeye that may be served raw and/or undercooked

- Observed Hand Sinks behind line being used to store items. One contained a wash cloth and steel wool, the other contained gloves.
- Observed no hand towels present in the dispenser next to the hand sink in the back of house grill area.
- Observed: Cooked Spinach at 120F, Mixed Vegetables at 95F, and Turmeric Cauliflower at 98F in the far left (from behind counter) vegetable hot holding section of the Food Bar. Observed French Fries Hot Holding at 90F. Observed Cheese Pizza at 114F.
- Observed Partially Cooked French Fries at 67F and Mozzarella Cheese at 45F. On the Food Bar Line where Hot Holding section meets Cold Holding section observed: Mozzarella Cheese at 50F and Cooked Corn at 48F.
- Observed Dead Roach Stuck in Glue Trap underneath the 2 Stack Hot Holding Unit where permits are posted.
- Observed white light visibly shining under door where sweep used to be allowing for possible entry of pests.

- Handwashing facilities in kitchen and in bar area observed without soap.
- Bins of raw beef slices placed next to ready to eat cold cuts (ham and turkey) in the walk in refrigerator and in low boy drawer refrigeration units in kitchen.
- Smoked salmon, cooked beets, sliced tomatoes, salad, turkey cold cuts, anchovy and cheese registered between 48°F to 50°F in two low boy refrigeration units in kitchen. Said units were frequently opened during busy breakfast rush. The lids of top section of said units observed broken.

- Observed no test kit for Quaternary Ammonium used at the 3 compartment sink.
- Observed hard boiled eggs on ice at improper cold holding temperature. Also observed cooked rice sitting out on counter at improper cold holding temperature.

- Observed raw chicken stored over ready to eat (RTE) coleslaw in the walk in cooler. Observed raw shell eggs stored over ready to eat peppers.

- EHS observed an employee handling dirty dishes, and then handle cleaned dishes to be stored.
- EHS observed live mussels in the walk-in cooler and the reach-in cooler on the line with no tags to identify/separate batches of mussels. Upon review of the shell stock tags, the date when the last shell stock was sold from the container is not being recorded on the tag.
- The ice machine in the kitchen was observed with black and pink soil residue on the inside of the bin that holds the ice.
- EHS observed a spray bottle with a clear liquid inside, with no identification at the lounge bar.
- The facility has multiple low temperature dishwashers, and no testing strips on site to test the concentrations of sanitizer in these machines.
