Ashburn Restaurant Inspections: Champs, Betty's Grill, KFC
The Loudoun County Health Department recorded violations at several restaurants around the Ashburn area during recent inspections.
ASHBURN, VA — Several restaurants around Ashburn, Dulles, and Sterling recorded violations during recent inspections from the Loudoun County Health Department. The most recent inspections occurred between May 11 and May 17.
Many COVID-19 restrictions around the state have relaxed, so health inspectors are returning to conduct some restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

- A baseball hat was observed hanging on the shelf of the dry storage.
- A wet wiping cloth was found stored in a sanitizing solution that registered 0ppm chlorine.

- The person in charge did not know the 5 big foodborne illnesses that are reportable to the department and the signs and symptoms.
- Insect control device is located over the reach down freezer with ice cream at the food prep area where dead insects may be impelled or fall.
- Several live fruitflies (approximately 50) observed near the handwashing facility in rear food prep/storage area.
- An accumulation of dead fruitflies were found in sticky fly strips in food prep/storage room.
- Several dirty wet wiping clothes observed stored in open bucket.

- Date marking not provided for cooked ready to eat (RTE) food such as samosa, fried cauliflower, vegetable fritters and chickpeas in the walk in refrigerator and in one door reach in refrigeration unit. As per the PIC said food were prepared more than 24 hours prior.

- Total violations: 11
- A small rice cooker placed on a stool was found placed directly in front of the hand washing sink at the dish machine area. Hand washing sink is blocked. EHS also observed a hose used to drain condensation from the ice machine draining into the hand sink.
- EHS observed improper separation of raw animal proteins from one another as well as improper separation of raw animal proteins from RTE (ready to eat) foods. Raw shell eggs over RTE vegetables in the line cooler, raw seafood and beef stored directly on top of loosely wrapped raw chicken satay in the walk-in cooler.
- Several knives were found stored above the prep sink with food debris on them.
- A cooler at the far end of the line was found with all TCS (time/temp control for safety) foods at 52F.
- The majority of foods within the facility were observed with no date marking.
- Cut cabbage, bean sprouts, cut tomatoes, cut lettuce were all observed stored at room temperature with no time stamps.
- A spray bottle of liquid cleaner was found in the bar area without a label.
- Salmon Filets were observed thawing in the walk-in cooler in ROP (reduced oxygen packaging / vacuum packaging) without the package being perforated to introduce oxygen while thawing.
- A bin of raw chicken, a container of peanut sauce, and vegetables were found stored on the floor of the walk-in cooler.
- EHS observed raw potatoes being prepped (cut) on the drain board of the entrance of the dish machine.
- EHS observed a food employee cooking on the line without a hair restraint.

- Observed Hand Sink next to 3 Vat sink to contain plates, trays, and steel wool.
- Observed 16 cartons containing 30 eggs each to be stored beneath shelves by ovens and a Milk/Cream Mix with "Crem Blanchito" with another milk based creams to make dressing at ambient temps. Mgmt indicated that items were discarded within 2 hrs and the files/time stamps will be added.
- Observed 4 tongs on oven handles, one tong resting on cooking vat containing corn cooling beneath the food prep area. Observed Ice scoop laying handle down in the ice bin.
- Observed wet mop in the basin not make for air drying in the back hallway area by the exit.
- Ashby Ponds- Maple Grove Continuing Care, 21160 Maple Branch Terr Ashburn, VA 20147

- Observed serval hand sink without signs to remind employees to wash hands.
- On second floor hand sink there was no soap.
- Observed scoops of ice cream in bowls uncover in 3 floor reach in cooler.
- Observed egg salad 50F 3rd floor and honey dew 44F at an improper cold holding temperature.
- Observed lettuce 50F and tomatoes 45F on multiple floors were at an improper cold holding EHS asked why and was told that those food items were on time. There was no written procedures in place and food items were placed in the reach in cool after lunch.
- The side by side refrigerator/freezer 49F left side 4th floor was not holding 41F or below.
- Observed the build up from splashing of juice an accumulation on the top plastic part where the spot come out of with.

- Several live fruitflies observed near dishwashing area in the kitchen.
- Proper date marking not provided to cooked/prepared ready to eat temperature control for safety (TCS) food such as red curry, green curry and panang curry in the walk in refrigerator. Said food had been cooked, cooled and held for more than 1 day.
- Raw marinated chicken, raw ground chicken, raw pork, raw beef, tofu registered at 44-45ºF in top section of low boy refrigerator in kitchen. As per the PIC, the lid of said unit was left open during lunch orders.Water from the handwashing sink at @LOCATION@ was measured at a temperature less than 100°F.

- No supervisors or managers are certified food protection managers in that the Certified Food Manager (CFM) certificate posted for the person in charge (PIC) observed expired 5/1/2022.

- The facility does not have a written policy or procedure for the proper clean up of vomit and diarrheal events.
- A personal water bottle was found stored on top of food in the open top cooler to the right, just inside the main entrance to the kitchen.
- The handwashing sink located to the right of the dish machine is blocked by a trash can.
- Raw chicken was found stored beside and over raw beef and pork in the walk-in cooler.
- The high temperature dish machine is not reaching the minimum 160F (152F), and therefore is not sanitizing surfaces
- 4 broths were found hot holding at improper temperatures (110F-128F). Chicken, Beef, Vegetable, Pork.
- Most items observed in the facility do not have date marking.
- Spray insecticide (HotShot) was observed in the kitchen on a shelf.
- Several large containers of hot broth were observed improperly cooling in the walk-in cooler with lids firmly affixed, and excessive condensation.
- Several containers of broth were found stored/cooling directly on the floor of the walk-in cooler.
- The facility does not have a thermometer to monitor the temperature of the high temp dish machine.

- This facility is utilizing a cook chill method for their bulk sauce production. Hot sauces (pomodoro, meat sauce, alfredo sauce)are placed in plastic bags and sealed with zip ties. They are then submerged in an ice bath for rapid cooling. This facility d oes not currently have a HACCP plan for keeping the TCS foods in the sealed bags for longer than 48 hours. EHS discussed this method with the PIC at the last inspection. The bags of sauces are date marked with a 5 day hold at 41F or less.
- The utensil temperature at the high temperature dish machine is below the required minimum of 160F. Utensil temperature measured at 153F. Wares are not getting sanitized after cleaning and before use.
- A bag of raw chicken breasts observed stored in the same container as a bag of raw salmon. The juice from the chicken clearly observed in contact with the raw salmon. Two bags of raw ground beef stored on top of a container of seasoned bread crumbs as well as a container of cooked pasta.
- The water supply to the two hand washing sinks in the ware washing area is shut off. According to the PIC (person in charge) the hand sinks in the ware washing area are not used. The nearest hand washing sink is around the corner past the walk in at the prep kitchen area.

- Observed the follow items with the intention to hot hold out of temperature: Cooked Chicken in display at front: Thigh 117, breast 119, thigh 118. Also observed Sauteed Onions at 78F and Cooked Peppers at 76F by grill.
- Observed the following: Rice Scoop in Rice Cooker; Scissors for chicken, chopper, and tongs in a container containing stagnant water.
- No Bleach Test Strips available upon request.
- Betty's Grill Restaurant, 46950 Community Plaza #123 Sterling, VA 20164

- Observed the following: Raw Beef stored above open bucket of Ready to Eat Green Sauce in the Walk In; Raw Shell Eggs over ready to eat vegetables in the Walk In; Raw Shell Eggs over RTE Prepared Soups/Vegetables in the 2 Dr Upright.
- Observed Bleach used in 3 VAT Sink used for sanitizing dishes and surfaces to have a concentration of above 500ppm and out of range causing potential chemical residuals and preventing sanitizer from working properly.
- Large Pan of Steamed Potatoes and Carrots found outside pressed against electric box at 97F.
- Observed Umita (Cooked Corn and Cheese Tamales) out at front counter. Staff indicated the intent was to keep them there for up to 2 hours and reheat upon request.
- Observed Steamed Potatoes and Steamed Carrots in the parking lot area pressed against the electric box subject to environmental contamination. Several Other Foods stored less than 6'' on ground in walk in.
- Observed several tongs on ovens, ice scoop in ice bin, and spoons under grill.
- No Air Gap Observed Under 3 Compartment Sink
- Observed several mops in the parking lot outside of the backdoor sitting in their own soiled water in buckets.

- Raw steaks placed with and above to bags of ready to bread and tortillas in two door reach in freezer in kitchen.
- Several items such as cooked chill pasta, raw marinated chicken, cheese, cut tomatoes and ham registered between 44°F to 45°F in two door low boy refrigeration unit in kitchen. Said unit registered at 45°F. As per the PIC said unit is being repaired.
