Ashburn Restaurant Inspections: Cracker Barrel, Toosso, Sky Zone
The Loudoun County Health Department cited violations at several restaurants during inspections in Ashburn, Dulles, and Sterling.
ASHBURN, VA — Several restaurants around Ashburn and eastern Loudoun County recorded violations during recent health department inspections. The most recently published round of inspections occurred between March 9 and March 15.
COVID-19 restrictions have relaxed around the state, so health inspectors are returning to conduct some restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

- This facility does have an employee health reporting policy, but not all employees have read and signed the agreement.
- The facility was not able to provide a plan or policy for the correct clean up of vomit or diarrhea
- Hand soap was not available at the hand washing sink in the women's bathroom, the hand sink on the line and the hand sink in the dishwashing area.
- No provision to dry hands was observed at the two hand sinks in the kitchen or the women's bathroom.
- 2 containers were found stored in the hand washing sink to the left of the 3 basin sink.
- Several bowls, utensils and containers were found stored with food debris on them.
- EHS observed several employees without hair restraints portioning sides to be served.
- A build up of soil debris was observed on multiple surfaces (cooler faces/handles, handle on warmer).

- The hand sink in the Kitchen area was observed with a container of equipment within the basin, and a large steamer fixed in front, blocking access.
- Raw chicken was observed stored over raw beef and raw shrimp in the walk-in cooler and raw beef stored over tofu & broccoli in the low boy cooler on the line.

- The person in charge (PIC) was not able to produce a verifiable employee health reporting agreement for each of the food employees.
- Employee observed exiting the kitchen to use the office computer and observed blowing their nose. Upon re-entering the kitchen the food employee immediately re-engaged in food preparation without first washing their hands at the hand sink.
- The low temperature dish machine observed sanitizing at a concentration that is too low. Sanitizer concentration is less than 25ppm. Wares are not effectively getting sanitized after cleaning and before use.

- In prep cooler 3 cooked pasta 46F and house made whip cream 44Fat an improper cold holding temperature.
- Observed cut tomatoes 45F and lettuce 45F cooling at the top part of prep cooler 1. Penne pasta 46F cooling at the bottom of prep cooler 1 tight packaged.
- Observed in the 2 two door reach in coolers in the bar (55F/53F) and dessert prep cooler 52F not maintaining cold hold temperature of 41F or below.
