Ashburn Restaurant Inspections: Moldy Produce, Fruit Flies, And Roaches At One Location

The Loudoun Health Department inspected several restaurants around Ashburn recently, including a location with roaches and fruit flies.

ASHBURN, VA — Several restaurants around eastern Loudoun County had violations during recent inspections from the health department. In total, inspectors from the Loudoun County Health Department cited violations at 13 restaurants during their most recent week of inspections in Ashburn, Dulles, and Sterling.

As coronavirus restrictions continue to fluctuate, health inspectors are returning to conduct restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.

      • Handsink at bar observed to have no paper towels in dispenser.
      • Observed virtually all containers of RTE foods in Walk in and Prep Top to be uncovered. Observed covered raw lamb over RTE uncovered chicken in walk in.
      • All Food items in report are in working containers without a name label.
      • Observed pizza slicer in between prep tables, tongs on oven handle contacting oven, and scoops at oven in pan of stagnant water.

      • Observed wet mop in mop bucket, but not in drying portion.

      • The internal bin of the ice machine has soil residue visible on its surface.
      • Boba in the warming unit is using time as the public health control with no documentation to track time.

      • Several utensils were found stored in a container of stagnant water, one utensil in a container of sanitizer.
      • A spray bottle with sanitizer that was unlabeled was found on the line.
      • A package of dumplings and several portions of white rice were found without date markings.
      • Loosely wrapped raw shrimp was found stored above RTE curry sauce in the low boy cooler on the line.
  • Potomac Falls Health & Rehab Center, 46531 Harry Byrd Hwy Sterling, VA 20164
    • Date inspected: Oct. 22
    • Total violations: 6
      • There is no certified food manager present at facility.
      • Observed large tray of mixed vegetables and large mixed tray of chicken fried rice hot holding at 119F and 112F.
      • Observed two puddings left out at room temperature.
      • Observed ambient air thermometers at 4 cold holding units in the 4 kitchenette areas to not be displaying temperature properly.
      • Could not confirm that 2 stack hot holding unit used for the chicken fried rice and steamed vegetables is capable of holding temperature needed for proper hot holding of foods.
      • Observed several backpacks, purses, and cell phones are various areas in the food prep location.

    • Total violations: 3
      • Observed various cheeses and ranch cold holding at improper temperature in prep unit 2.
      • Upon EHS arrival, pizzas utilizing time as a public health control were not marked or otherwise identified to indicate the time the food needs to be discarded.
      • Observed no test kit for Quaternary Ammonium sanitizer.

      • Observed outer door closest to the restrooms not tight fitting. Door observed with a significant amount of daylight at the bottom of the door.

      • Observed expired test kit for Quaternary Ammonium sanitizer.
      • Observed several missing floor tiles under the 3 compartment sink and prep sink area.

      • Food employee reporting agreement (form 1B) reviewed and signed by employees not provided during inspection.
      • Hand sinks in the bar area observed without paper towels.
      • Fried onions in a container placed next to the flat griddle observed with heavy mold growth.
      • Cut tomatoes observed with mold growth in a container in the top section of the two door low boy refrigerator in kitchen.
      • Chili, pulled chicken and melted cheese registered at 115°F in the hot holding unit in kitchen.
      • Cooked chicken wings and marinated raw chicken in low boy refrigerator registered at 49°F. Said food had been in said unit overnight.
      • Cut tomatoes, cheese, cut leafy greens and grilled chicken registered at 46°F in the two door low boy refrigeration unit.
      • Raid (Insecticide) labeled for indoor home use observed under the counter in the bar area. Facility cannon self apply insecticide in the facility.
      • Two live roaches observed running on the dish machine and on the box of to go cups. Several dead roaches observed on the floor throughout the kitchen and the bar area.
      • Several live fruitflies observed in bar area.
      • Sanitizer test strip for sanitizer used in bar not provided.
