Ashburn Restaurant Inspections: Fruit Flies Throughout Facility

The Loudoun County Health Department recorded violations at several facilities around the Ashburn area during recent inspections.

ASHBURN, VA — Several facilities in the Ashburn area recorded violations during health department inspections between May 3 and May 9.

Almost all COVID-19 restrictions around the state have relaxed, so health inspectors are returning to conduct some restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.

    • Date inspected: May 3
    • Total violations: 1
      • Observed cheese sauce hot holding at improper temperature (110 F). Time/temperature control for safety (TCS) foods must be hot held at 135F or above to prevent growth of harmful bacteria.

    • Date inspected: May 3
    • Total violations: 5
      • Employee observed slicing the egg in half with his bare hand. No bare hand should be in contact with ready to eat food.
      • Employee observed handling raw chicken on the prep cooler which hold raw vegetables. Avoid preparing raw chicken on the prep cooler to prevent possible food contamination.
      • Big containers of onion sauce and tomato sauce noted as improperly cooled to prevent the growth of harmful bacteria. these food items were made yesterday or the day before and has been cooling for more than 24 hours. Cool time/temperature control for safety (TCS) food(s) from 135F to 41F within a total of 6 hours and from 135F to 70F within 2 hours.
      • Observed cooked chicken in a pan under the prep table at room temperature cold holding at improper temperature (F). Time/temperature control for safety (TCS) foods must be held at 41F or below to prevent growth of harmful bacteria.
      • Observed time/temperature control for safety foods (TCS) not properly dated for disposition. Foods not labeled include: Tomato sauce, onion sauce, cooked chicken, cooked ground lamb, goat and dal. Ready to eat TCS foods held over 24 hours must be date marked with either made on date or date the food item must be consumed not to exceed 7 days.

    • Total violations: 2
      • Chicken wings registered at 49°F in the four drawer low boy refrigerator in front of the grill and fryer in the kitchen. Said unit registered operating at 46°F. All other food items such as raw salmon and calamari observed placed with ice on it to maintain the the temperature below 41°F.
      • Low boy refrigerator in front of the grill is not maintaining time/temperature control for safety (TCS) foods at 41°F or below.

    • Total violations: 2
      • Low boy drawer refrigerator holding prepped sandwiched observed not maintaining time/temperature control for safety (TCS) foods at 41°F or below in that said unit registered operating at 47°F.
      • Several live fruit flies observed in salad and sandwich prep and service area, self service soda area and near mop sink in the facility.

    • Date inspected: May 8
    • Total violations: 1
      • A box of frozen vegetables (peas) were observed stored on the floor of the walk-in freezer. Foods shall be protected from sources of contamination by storing them at least 6" off the ground. Box of vegetables was moved to a shelving unit. Corrected.

  • Chick-Fil-A, 44835 Lakeview Overlook Plaza Ashburn, VA 20147
    • Date inspected: May 9
    • Total violations: 1
      • A spatula found cleaned & stored was observed with cracks/chips/frayed edges at the three basin sink. All food contact surfaces shall be free from cracks, chips, breaks, or any other similar imperfections that may impede the proper cleaning and disinfecting of those surfaces. Spatula was voluntarily discarded. Corrected.
