Ashburn Restaurant Inspections: Mice Droppings At Middle School Cafeteria's Kitchen

The Loudoun County Health Department inspected several restaurants and schools in the Ashburn area and cited several with violations.

ASHBURN, VA — Inspectors found mice droppings during a health inspection at a Loudoun County middle school, according to a report published online. This accounts for one of the many violations found during inspections between Sept. 29 and Oct. 5.

As coronavirus restrictions continue to fluctuate, health inspectors are returning to conduct restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.

    • Date inspected: Sept. 29
    • Total violations: 11
      • The person in charge failed to locate sanitizer until the end of the inspection, could not describe the proper ware washing set up as wash, rinse, sanitize, could not provide signed employee health policy for all staff, is not controlling presence of flies by operating with back door propped open, and is not ensuring food is stored in a protected manner and cooled properly.
      • Observed no signed Employee Illness Reporting agreements for employees. Food employees are not informed of their responsibility to report to the person in charge information concerning their health and activities as they relate to diseases transmitted through food.
      • Employee observed using the hand sink to rinse out a cleaning cloth.
      • Observed the following foods stored in an unprotected manner: cut head of lettuce and green pepper stored unwrapped in prep cooler
      • Observed containers of cheese and cheese mixture stored in the Migali prep cooler by back door at improper temperatures: cheese 51F, Cheese mixture 58F. Ambient air temperature in the Migali prep cooler is at 52F, with the temperature monitoring gauge flashing. Foods have been held in prep cooler overnight.
      • Observed improper cooling of cooked beef and chicken. Large amount of cooling chicken breasts and beef stored in small, deep metal containers with lid in place. Owner stated chicken and beef had been cooked and placed in prep cooler at 2:00pm.
      • Observed back door and service window open.
      • Observed many flies throughout kitchen.
      • Observed no cooking equipment (pots and pans), food containers, spices, nor canned goods stored on trailer.
      • Observed the following foods stored in an unprotected manner: Rice and bread dough stored directly in grocery bags.
      • The cutting boards are heavily scored and stained. The food contact surface is no longer easily cleaned and sanitized due to condition.

      • Observed: Employee handsink blocked with dishmachine parts.
      • Observed: Ice machine has pink/black residual on deflector.

      • Observed daylight through back door at bottom of the door. Door is not tight fitting.
      • Observed inadequate lighting in the walk in cooler. Walk in cooler required the use of a flash light to see items inside.

      • Containers of cooked rice were observed with no date labels.
      • The walls, floors, equipment (grill and cooler) are moderately soiled with debris and a film.
  • Ashby Ponds- Cardinal Clubhouse (Robin’s Nest), 21170 Ashby Ponds Blvd Ashburn, VA 20147
    • Date inspected: Sept. 29
    • Total violations: 5
      • Observed andouille sausage thawing in metal container on at 1 compartment sink and had been out for about 30 to 45 minutes.
      • Observed cut tomatoes cooling in the prep cooler.
      • Observed pull pork in the hot holding at an improper temperature (127F, 130F).
      • Observed a large pot and a baking pan in the sanitizer with 0 ppm sanitizer.
      • Observed sliced with food residue on the slicer.

    • Date inspected: Sept. 30
    • Total violations: 1
      • Date marking not provided to cooked/ prepared ready to eat temperature control for safety food such as white rice, noodles and shrimp sumai in the walk in refrigerator. Said food had been cooked, cooled and held for more than 1 day.

      • Food employees observed drinking tea from open cups/container in kitchen.
      • Raw shrimp placed above tofu in the low boy refrigerator in kitchen.
      • Garlic and oil registered at 60°F in spice tray at room temperature in kitchen. Once garlic is mixed with oil, said food shall be kept cold below 41°F.
      • Beef egg rolls registered at 64°F next to the fryer at room temperature. Said egg rolls were taken from the walk in refrigerator and placed them in said location for reheating and serving.
      • Date marking not provided to beef egg rolls prepared a day prior held in boxes in walk in refrigerator. Said food is held up to 7 days as per the PIC.
      • Rice scoops observed stored in containers of standing water at room temperature next to the rice warmers in kitchen.
      • Cutting board on top of low boy refrigerator in kitchen observed dirty and discolored.

      • EHS observed a leak in the plumbing system below the three compartment sink. There is a container below the plumbing system catching the leaking water.
      • Reduced oxygen packaged (ROP) salmon not thawed properly. Salmon left in ROP packaging at refrigeration temperatures
      • The low temperature dish machine is not properly sanitizing wares.0ppm sanitizer observed when tested.
      • The person in charge was not able to produce a verifiable employee health policy for food employees such as signed copies of FDA form 1-B. In previous inspections the signed employee health policy forms used to be kept in the MSDS binder on the wall. They were not in the binder today. The restaurant just reopened two weeks ago after being closed for over a year due to covid-19.

      • The prepared ready-to-eat (RTE) American cheese and Polynesian sauce in the 2 door reach in cooler was held for more than 7 days after preparation.
      • Observed undercooked steak is offered on the menu without proper disclosure.
