Ashburn Restaurant Inspections: Moldy Cheese, Fuzzy Strawberries
Recent inspections at restaurants in the Ashburn area uncovered a variety of violations at more than a dozen restaurants.
LOUDOUN COUNTY, VA — Inspectors found fuzzy strawberries and moldy cheese during recent inspections at restaurants around the Ashburn area. These account for two of the many violations found during inspections between Oct. 6 and Oct. 12.
As coronavirus restrictions continue to fluctuate, health inspectors are returning to conduct restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

- Upon discussion with the person-in-charge, one or more of the elements of an effective employee health policy is either missing or incomplete. A complete employee health policy is required to be in place at the food establishment. At the time of this inspection, the Health Department previously provided documentation for employees to sign in order to have a verifiable manner of reporting. Employees have yet to sign.

- Handwashing facility next to the walk in refrigerator observed with hot running water.
- Milk, butter and desserts registered at 46°F in the lower section of reach in refrigerator in coffee and dessert area. Unit observed with inadequate air circulation due to trays placed in each shelves.
- Temperature control for safety food such as cut leafy greens, cheese, cut tomatoes registered at 46°F in salad station low boy refrigeration unit in kitchen. Said unit registered operating at 46°F.
- Hand washing sink next to the walk in refrigerator observed leaking.
- Employee restroom at the back of the kitchen observed not flushing properly.

- Caterer explained that they prepare certain menu items in the kitchen of their friend's restaurant. They explained that they not always store and prepare food at their approved commissary kitchen Frontier Kitchen.
- EHS observed raw chicken and raw ground beef hamburger patties wrapped separately but stored together in a cooler bag on a shelf in the walk in cooler. The shelf the cooler bag was stored on is above a shelf of raw shell eggs.

- Food employees observed eating on food prep table next to the vegetable wash in the kitchen.
- A bag of cheese in the top section of low boy refrigerator in pizza prep/service area observed with mold growth in it.

- The Person in Charge had not ensured that staff are monitoring food temperatures, using proper methods to rapidly cool hot foods, or monitoring sanitizer readings.
- When asked, the Person in Charge was not able to locate documentation that all on-duty staff have been trained on employee health policy.
- Wares cycled through the dish machine are not being sanitized, a reading of less than 25 ppm and multiple readings of zero were taken.
- Multiple foods inadequately cooled including pasta cooked about 4 hours ago at 72°F, pasta cooked yesterday at 44°F, wings cooked yesterday at 43°F-48°F.
- Foods in multiple coolers cold holding at improper temperatures including ricotta at 48°F (pizza cooler), chicken at 51°F (two door reach in cooler), provolone at 52°F (sandwich cooler) and lasagna at 54°F (cooler under stove).
- Foods held using time as a public health control are not marked to indicate the four hour window.
- Chemicals stored above clean linens.
- At the start of the inspection there were no food thermometers in the facility.
- Dough is stored in single-use bags that are not made from food grade plastic (garbage bags).
- Multiple refrigerators are not in a state of repair or adjustment that allows them to maintain proper food temperatures.
