Ashburn Restaurant Inspections: Passion Fin, Pizza 360

The Loudoun County Health Department recorded violations at several Ashburn locations during recent restaurant inspections.

ASHBURN, VA — Several facilities in the Ashburn area recorded violations during health department inspections between Dec. 21 and Dec. 27.

Most COVID-19 restrictions around the state have relaxed, so health inspectors are returning to conduct some restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.

    • Date inspected: Dec. 21
    • Total violations: 4
      • Pizza prep cooler cold holding diced chicken and sauces at improper temperature.
      • A bag of frozen chicken breast observed on the counter thawing.
      • Wet wiping cloths observed being on the counter.
      • Bathroom door observed without a self-closing latch.
  • Asian Fusion, 44260 Ice Rink Plaza #106 Ashburn, VA 20147
    • Date inspected: Dec. 21
    • Total violations: 3
      • The paper towel dispenser by the hand sink in the back by the stove is empty.
      • Ground chicken observed being stored on top of dry noodles.
      • Small prep cooler by the grill in the kitchen cold hold food at improper temperature.
  • Sbarro #736, 21100 Dulles Town Cir #238 Sterling, VA 20166
    • Date inspected: Dec. 22
    • Total violations: 2
      • Facility doesn't have a copy of the form 1B available for all the employees.
      • Sanitizer solution at the 3 vat sink is too strong, over 500ppm.
  • International House of Pancakes, 44030 Pipeline Plaza Ashburn, VA 20147
    • Date inspected: Dec. 22
    • Total violations: 1
      • Small containers of mac and cheese in the bottom drawer cooler next to the hot holding station is at 45 degrees Fahrenheit.
  • Passion Fin Restaurant, 42780 Creek View Plaza #100 Ashburn, VA 20147
    • Date inspected: Dec. 27
    • Total violations: 6
      • Observed the following hand sinks blocked from use: Bar hand sink with a mat, liquor bottles, and containers stored in basin, sushi hand sink with container of water stored in basin, and grill area hand sink with clean towels stored in basin.
      • In-use dispensing scoops for both brown and white rice are stored in stagnant ambient temperature water. Water temperature in rice scoop holding containers observed at 58F, and 65F and does not meet minimum requirement of 135 F or above.
      • TCS cooked rice, where time is used as a control, is observed stored in the following areas without a label indicating the time the food is to be removed from service: rice used for preparing fried rice at grill station and sushi rice held at sushi bar.
      • Chlorine sanitizer solution concentration at 3 compartment sink observed above safe range of 50-100ppm. Chlorine sanitizer at well above 200ppm.
      • Observed all prepared sauces without common name in walk in cooler and most without preparation date label.
      • The following areas in need of detail cleaning: exterior surfaces of grills and fryers, floors beneath all fixed equipment, and floor / wall juncture throughout.
  • Bawarchi Biryanis, 44640 Waxpool Rd, #150 Ashburn, VA 20147
    • Date inspected: Dec. 27
    • Total violations: 7
      • Employee observed contacting fried corn with his bare hand.
      • Cooked goat meat in the tall glass cooler observed at 50 degrees Fahrenheit.
      • Multiple cooked foods (onion sauce, tomato sauce, cooked cilantro,..) store in the reach in coolers observed without date marking.
      • Biryanis are being held without temperature control, according to the PIC they are using time control.
      • Utensils observed stored in standing water by the grill.
      • Mechanical warewashing water temperature is at 97 degrees Fahrenheit.
      • Ice machine observed with some black residues.
  • Ashby Ponds - Cardinal Clubhouse, 21170 Ashby Ponds Blvd Ashburn, VA 20147
    • Date inspected: Dec. 27
    • Total violations: 5
      • Observed high temperature dishwasher 153F sanitizing temperature should be at 160F or above.
      • Observed mash potatoes 131F (reheated 172F) in hot box in front foods held hot should be maintained at 135F or above.
      • Observed sliced tomatoes 44F in prep cooler 2 and fried cheese 65F on counter time/temperature controlled for safety foods should be held at 41F or below.
      • Observed the vegetable wash 4.0 pH the effective pH range is 0-3.0 pH.
      • Observed 1 door cooler 46F cold holding unit should be able to maintain 41F or below. Observed on several different cold and hot holding units with with seal that damaged.
  • Firehouse Subs, 20544 Easthampton Plaza #1002 Ashburn, VA 20147
    • Date inspected: Dec. 27
    • Total violations: 3
      • Food employee observed drinking from open cup in from food prep area.
      • Handwashing sink shall be only used for washing hands and always readily available for hand washing in that the handwashing sink in front food prep/service area observed with used cup placed in it.
      • Date marking not provided to prepared food item being held for more than 24 hours in that tuna salad that was prepared a day prior in front low boy refrigerator observed without date marking.
