Ashburn Restaurant Inspections: Pholicious, Hot Pot Legend, Sushi Mori

The Loudoun County Health Department recorded violations at facilities around Dulles, Ashburn, and Sterling during recent inspections.

ASHBURN, VA — The Loudoun County Health Department visited several locations around Ashburn, Dulles, and Sterling during recent inspections. Officials conducted the most recently published round of inspections between May 4 and May 10.

Many COVID-19 restrictions around the state have relaxed, so health inspectors are returning to conduct some restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.

    • Date inspected: May 5
    • Total violations: 10
      • The person in charge failed to state the big six foodborne illnesses.
      • Handwashing facility in kitchen observed being used to wash utensils.
      • Several trays of pastries or cakes observed being sold at the facility. Said pastries/cakes are bought from "Malgudi Veg".
      • Chemical dishwasher not sanitizing.
      • Vegetable sambar registered at 99°F in hot holding unit. As per the PIC said food had been in said unit for an hour.
      • Chicken curry and vegetable curry registered at 44°F - 45°F in one door low boy refrigerator. As per the PIC said food were left out on prep table for some time.
      • Date marking not provided to fried chicken, fried fish, vegetable pakoras and curry gravies in the walk in refrigerator. As per the PIC said were prepared more than 24 hours prior.
      • Facility observed using time as a public health control without adequate records for biryanis.
      • Several dead roaches observed on glue trap near dishwasher.
      • Several food items observed on floor throughout the kitchen.

    • Total violations: 1
      • Observed 3 slightly moist mops mop end down on floor next to mop sink.
  • Zone (The), 43811 Central Station Dr #100 Ashburn, VA 20147
    • Date inspected: May 6
    • Total violations: 2
      • Dish machine is nonfunctional, in a state of poor repair
      • Physical facilities are not being cleaned at a frequency necessary to prevent accumulation of food residue, dirt, debris. Large spill of beer in keg cabinet nearest entrance to storage area of the bar.

      • Hand sink was blocked by metal tray.
      • In walk in cooler bread had a green fuzzy residue.
      • A cleaned stored was observed with food debris on blade. The slicer had visible food residue around the blade had built of food debris.
      • In 2 door reach in cooler in front area noodles 49F and beans sprouts 51F noodles were in small bags and placed in a container.
      • Observed large pots being stored on the floor and box of noodles on the floor of the walk in cooler.
      • Rice scoop stored in stagnate water and thong store on the oven door.
      • Hank sink by dish machine faucet leaks and drains slowly.
  • Hot Pot Legend, 20462 Exchange St Ashburn, VA 20147
    • Date inspecte: May 10
    • Total violations: 3
      • Two containers of pork broth registered at 120°F in pots on the food prep table. Said food had been in said location for 40 minutes as per the PIC.
      • Several food items such as marinated beef, pork meatballs, beef meatballs, tofu, fish, calamari, mussels and shrimp registered between 44°F to 50°F in the reach in refrigeration unit. Said unit was open during the lunch time. Said unit registered at 50°F.
      • Date marking not provided to fried chicken in walk in refrigerator that has been held for more than 24 hours in said unit.
  • Sushi Mori, 20921 Davenport Drive #110 Sterling, VA 20165
    • Date inspected: May 10
    • Total violations: 3
      • The hand sink in the kitchen was observed completely blocked by a bucket, gloves and a container.
      • Several items that are stored over 24 hours were observed without a date mark (Dumplings, curry vegetable, tempura battered shrimp/veggies).
      • Two containers housing in-use utensils were found with stagnant water.

      • Test strips used for monitoring sanitizing solution levels are for testing pH, not Quat sanitizer (used in facility).
