Ashburn Restaurant Inspections: Pollos Inti, Chaska, McDonald's

The Loudoun County Health Department cited violations at facilities in Ashburn, Dulles, and Sterling during recent inspections.

ASHBURN, VA — The Loudoun County Health Department recorded violations at several restaurants and other facilities in the Ashburn area during recent inspections. Officials conducted the most recently published round of inspections between June 8 and June 14.

Many COVID-19 restrictions around the state have relaxed, so health inspectors are returning to conduct some restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

    • Total violations: 3
      • Observed: Whole muscle beef thawing in 3 compartment sink (in still water)
      • Observed: Personal items (pain reliever) stored above /next to food prep area.
      • Observed: Prepared food is being stored in sour cream containers.

      • One container of half and half registered at 48°F on prep counter in front. Person in charge unaware of how long said half and half was left in said location.

      • Several live fruitflies observed in rear mop sink area.
      • Hot/Cold water under insufficient or inadequate pressure at the handwashing facility next to ice machine in rear food storage and dishwashing area.

      • Rice is made in large batches and placed into smaller trays to fit into the hot holding unit. Two trays were sitting on prep table as there is no room in the hot hold unit at this time. Rice holding at 89F
      • Yucca is made at 11am, placed on table to cool for 2hrs and then placed in walkin cooler to finish cooling. Yucca is 80F after 2 hrs of cooling.

      • 2 spray bottles with blue fluid are stored behind front counter with no labeling.
      • Observed spray bottle of "RAID Defend Ant and Roach" labeled for indoor household use only in back of house.
      • Improper methods used to thaw ROP Tilapia. ROP Tilapia thawing without being removed from packaging first (per instructions on label/bag.)
      • Observation: Food stored on the floor and/or food stored less than 6 inches off the floor: Boxes of Beans and Corn stored on floor in back hall area, several items stored in walk in freezer on floor, and several items stored on floor in Walk in Refrigerator (all in boxes or containers.)
      • Observed Ice Scoop with handle laying on ice in the ice bin intended for human consumption.
      • Observed Ice Machine’s Guard inside machine not clean and has pink mold like residue.
      • Observed wet mop in mop sink next to wet mop on shelf containing chemicals next to mop sink.

    • Date inspected: June 10
    • Total violations: 3
      • Observed in use knife stored in between prep tables.
      • Observed containers near 3 VAT sink to be wet nesting water. Pooled water in containers does not allow for proper airdrying and could attract unwanted pests.
      • Accumulation of water on floor underneath soda station in front kitchen. Also observed in 3 DR Avan. Prep Top.
  • A Plus 40050H / Laredo Taquerea, 22405 Flagstaff Plaza Ashburn, VA 20147
    • Date inspected: June 10
    • Total violations: 4
      • The person in charge did not know the 6 big foodborne illnesses that are reportable to the department.
      • Raw animal food stored over and next to ready-to-eat (RTE) food in the refrigeration units in that cooked shrimp stored below raw ground beef in the low boy refrigeration unit in front food prep/service area. Ready to eat cake stored next to open bags of raw chicken in the reach in freezer in rear food storage area.
      • Cut tomatoes and cut lettuce registered at 48ºF in top section of low boy refrigeration units in front food service area.
      • The facility does have not a maximum temperature registering thermometer or other means to verify that the high temperature warewashing machine is sanitizing.
  • Panera Bread #1011, 43670 Greenway Corp Dr Ashburn, VA 20147
    • Date inspected: June 13
    • Total violations: 2
      • Three bags of cut lettuce registered between 49ºF to 44ºF in lowest drawer of four drawer low boy refrigerator in front food prep area. Said unit registered at 40ºF. As per the person in charge (PIC) said bags of salad might have been left outside at room temperature for sometime
      • Improper thawing in that a bag of tomato soup observed thawing at room temperature in one of the three compartment sink.

    • Total violations: 5
      • Management was not able to provide verifiable means that employees have been trained in the signs and symptoms of foodborne illness.
      • The facility does not have a written policy or procedure for the proper clean-up and sanitization of vomit & diarrheal events
      • Raw meats were observed stored over Ready to Eat (RTE) foods, raw shell eggs were observed stored over yogurt/sauces.
      • Foods within the deli cooler at the front line were found outside of acceptable temperatures.
      • Wet wiping cloths observed stored in sanitizing buckets with 0ppm sanitizer.

    • Date inspected: June 14
    • Total violations: 5
      • EHS observed mixing spoons at the shake station stored in cups with stagnant, dirty water.
      • Timers used to keep track of food items utilizing time as the public health control are not being used.
      • The handwashing sink adjacent to the three basin sink does not have means to dry hands after washing them.
      • Facility does not have a proper procedure for cleaning up vomit and diarrheal events.
      • Management could not produce verifiable means that employees have been trained in the signs and symptoms of food borne illness.
