The Loudoun County Health Department recorded several violations at restaurants around the Ashburn area during recent inspections.
ASHBURN, VA — Several restaurants around Ashburn, Dulles, and Sterling recorded violations during recent inspections from the Loudoun County Health Department. The most recent inspections occurred between June 1 and June 7.
Many COVID-19 restrictions around the state have relaxed, so health inspectors are returning to conduct some restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

- When asked, the Person in Charge was not able to provide verifiable documentation that all on-duty staff have been trained on employee health policy.
- A worker was observed rubbing their face then putting gloves on.
- Duck breast this has been seared, but not fully cooked, is observed stored in the warmer above fully cooked soup.
- Wares not sanitized before use after cleaning. The worker was observed leaving a pan in the quaternary sanitizer for less than the minimum of 60 seconds.
- Foods such as cheese above the fill line of the cooler at 46°F, and slaw at 68°F cold holding at improper temperatures.
- Some of the individual dessert portions offered at the dinner buffet are observed on uncovered plates.
- Wiping cloths improperly stored - the quaternary sanitizer is measured at less than 150 ppm.

- Both handwashing sinks in the kitchen (Front & Back) observed obstructed with items stored in them.
- Raw chicken kabobs were found stored above raw lamb kabobs in the front cooler.
- A pot of chickpeas was found hot holding on the stove at improper temperature (79F).
- No date marking of TCS or RTE (ready to eat) foods is being performed within the facility.
- This facility uses time as the public health control for the saffron rice. EHS observed no time stamp or mark on the container of saffron rice being held at room temperature on the counter.
- Foods packaged within the facility and offered for sale do not have labels.
- Two bus tub containers of raw ground lamb/beef and a pot of red sauce were found stored directly on the floor of the walk-in cooler.
- The testing strips for the Quat sanitizer have been compromised and are no longer viable (exposed to liquid).

- Pan of pre-seared (undercooked) slider beef patties and nacho steak observed stored over an open container of tomato soup in the blast chiller.
- Six pan of compound lemon herb butter (unsalted not whipped considered TCS- time temperature control for safety food) held at room temperature (temped at 57F) on the line during service.
- Upon inspection of the ice machine at the third floor beverage station EHS observed small white pieces of plastic on the ice deflector. It was concluded that the pieces of plastic were coming from the ice paddle used to maneuver ice within the ice machine. The paddle was observed heavily scratched and scored.
