Ashburn Restaurant Inspections: Violations At 11 Locations

Nearly a dozen restaurants around eastern Loudoun County were cited with violations during recent visits from the Loudoun Health Department.

ASHBURN, VA — During recent inspections from the Loudoun County Health Department, 11 different locations in eastern Loudoun County cited violations. The inspections took place from Nov. 24 to Nov. 30.

As coronavirus restrictions continue to fluctuate, health inspectors are returning to conduct restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.

    • Date inspected: Nov. 29
    • Total violations: 1
      • Containers of Marinara sauce, tuna salad, and cooked sliced potatoes were found with dates past the 7-day disposition.
  • Chesterbrook Academy, 46120 Woodshire Dr Sterling, VA 20166
    • Date inspected: Nov. 29
    • Total violations: 5
      • Establishment is unable to provide procedures for employees to follow when responding to vomiting or diarrheal events.
      • Utensils and pots not sanitized adequately after wash and rinse.
      • Date Marking not provided to open container of yogurt.
      • Receiving temperature log for temperature control for safety food not provided.
      • Wall, fan and shelving of the reach in refrigerator holding food observed with old debris and mold growth.

    • Date inspected: Nov. 29
    • Total violations: 2
      • Person in charge could not provide documentation that employees have been trained on the signs, symptoms, and exposures to foodborne illnesses and who to report to.
      • Observed shredded cheese 45F at an improper cold holding temperature.
  • Chinaway, 156-H Enterprise Street Sterling, VA 20164
    • Date inspected: Nov. 29
    • Total violations: 7
      • No certified food manager (CFM) in the facility.
      • Establishment is unable to provide procedures for employees to follow when responding to vomiting or diarrheal events.
      • Handwashing sign not provided to the hand sink in the restroom.
      • Temperature control for safety (TCS) food such as chicken wings, raw chicken, raw pork, raw beef registered at 43°F in the walk in refrigerator in kitchen. As per the PIC said unit was frequently opened during the lunch rush. Unit temperature registered at 43°F.
      • Date marking not provided to the cooked/cooled chicken wings in the walk in refrigerator.
      • In-use utensils improperly stored between use in that scoops and serve spoons observed stored in container of standing water at room temperature.
      • Shelvings in the walk in refrigerator holding food observed rusted and with old food debris and wall observed with mold.

      • There is no signage at the handwashing sink at the bar kitchen window (serving window).
  • Hunan Cafe, 415 S. Sterling Blvd Sterling, VA 20164
    • Date inspected: Nov. 29
    • Total violations: 9
      • The hand washing sink next to the three compartment sink is blocked with a large stock pot sitting on it.
      • Raw shrimp stored over ready to eat sauces and vegetables in the low boy cooler on the cook line.
      • Food employee observed washing a full sheet tray (baking tray) at the three compartment sink without sanitizing it. The food employee washed it with soap and then rinsed it with water.
      • This facility uses time control for two TCS food items (cooked lo mein noodles, cut cabbage) for the lunch period. These two TCS food items sit on the prep table next to the cook line starting at 11 am. The two TCS foods are not time stamped with the time said food came out of temperature control so it can monitored when four hours has passed. The owner states that they use the two TCS foods within 2 hours. the two items had just come out of temperature control and were still within the cold holding temperature range.
      • One bottle of Hydrogen peroxide and a bottle of liquid cold medicine stored on a shelf with clean plates and utensils over the prep cooler on the cook line.
      • Wet wiping clothes stored on prep counters throughout the cook line.
      • Three knives observed stored in between two prep tables on the cook line. Space between two prep tables observed visibly dirty with food debris and grime.
      • Facility is re-using plastic grocery bags and plastic bags from bread to store their ready to eat chicken wings in at the prep cooler. Facility is also using a black trash bag (new) to cover raw beef in the walk in cooler.
      • Personal belongings stored throughout kitchen with utensils and food contact surfaces and prep areas. Jacket stored on top of single service containers in the dry storage area, employee food containers (not filled) stored with clean plate ware on the line in two places.
  • Pomodoro’s Restaurant, 21595 Smith Switch Rd Ashburn, VA 20147
    • Date inspected: Nov. 30
    • Total violations: 7
      • Observed hand sink by 3 compartment sink with a tray and not working (no running water).
      • Observed 2 containers of half and half with a date of 11/29/21.
      • Observed cut tomatoes 45F and shredded mozzarella 45F at an improper cold holding temperature.
      • Observed cheese sauce with a date mark of 11/21/21.
      • Observed pizza on counter no temperature control that is sold by the slice without labeling.
      • Observed food (marinara) being stored on the floor of the walk in cooler.
      • Observed prep cooler under to-go container holding at a temperature 43F. In dishwashing area there is an ice machine that is not working and not in use.
  • Black Hog BBQ, 20064 Riverside Commons Plaza #180 Ashburn, VA 20147

    • Total violations: 2
      • Observed no paper towels at hand sink by 3 compartment sink.
      • Pulled pork 117F prepped (pulled apart) earlier at an improper hot holding temperature.
  • Hula Inn, 46000 Old Ox Rd #103 Sterling, VA 20166

    • Total violations: 2
      • Observed one of the hand sinks in the back of house to not have a handwashing sign with directions and a reminder.
      • Observed spray bottle of RAID Ant and Roach Killer labeled for residential use only in back of house
  • Pizza Palace, 413 South Sterling Blvd Sterling, VA 20164
    • Date inspected: Nov. 30
    • Total violations: 5
      • The facility does not have sanitizer test strips for chlorine bleach
      • The facility holds cooked yuca under time control during the lunch hours. It is held at ambient air temperature below the rice cooker in the back kitchen. The facility does not have written procedures on file for utilizing time control. The yuca is not time stamped.
      • Raw shell eggs stored over ready to eat chicken in the small prep cooler in the kitchen and raw shell eggs stored over ready to eat hot dogs and vegetables in the walk in cooler.
      • The hand soap dispenser at the front serving counter is broken and does not dispense hand soap.
      • The person in charge (PIC) could not produce a verifiable employee health training agreement. The owner stated it was filed at home.
  • Sabor De Mi Tierra, 46839 Maple Leaf Place #187 Sterling, VA 20164
    • Date inspected: Nov. 30
    • Total violations: 6
      • Observed Hand Sink near 3 vat to be used to store pots and pans
      • Observed accumulation of debris in microwave near oven.
      • Observed a large amount of raw beef trip "fresh from delivery" thawing in empty 3 vat sink.
      • Observed Tongs stored on Oven and observed multiple in use knives in same container on prep unit.
      • Observed Bleach Test Kit to have expiration date of "10/13"
      • Observed plumbing on Hand Sink in back of house to not be draining water.
