Ashburn Restaurant Inspections: Violations At 12 Locations

The Loudoun Health Department inspected a number of restaurants around Dulles, Sterling, and Ashburn, including a dozen with violations.

ASHBURN, VA — Several restaurants around eastern Loudoun County had violations during recent inspections from the health department. In total, inspectors from the Loudoun County Health Department cited violations at 12 restaurants during their most recent week of inspections in Ashburn, Dulles, and Sterling.

As coronavirus restrictions continue to fluctuate, health inspectors are returning to conduct restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.

    • Total violations: 6
      • Raw animal foods such as burgers and fish stored above ready to eat foods.
      • Items cycled through the glass washer at the bar are not being sanitized.
      • Foods such as pasta cooked about 5 hours ago at 69°F and wings cooked about 5 hours ago at 70°F inadequately cooled.
      • Some foods such as arugula at 46°F and pork at 43°F cold holding at improper temperatures.
      • There is ice build-up in the walk-in freezer.
      • The interior ceiling of the ice machine is noted in need of cleaning.

      • Observed bucket in hand sink.
      • Observed Soda Nozzles to be very unclean using alcohol pad on sprite, soda, and water nozzles.
      • Observed several working containers to have inaccurate labels.
      • Observed Frozen Meat Thawing in Stagnant Water in 3 VAT sink.
      • Many food containers in establishment are found to contain old or inaccurate labels.
      • Observed containers to be wet nesting water after cleaning.
      • Observed 3 DR Prep Top to be holding temperature, but pooling water at preopening.
      • Facility was observed to being using Quat Solution for sanitizing without a test kit.

      • Observed on the menu without an asterisk next to lamb and NY steak that is undercooked.
      • Observed lettuce 59F in reach in cooler covered.
      • Observed faucet at 3 compartment sink leaking.

      • Observed raw shelled eggs being stored under RTE cream cheese.
      • The ready-to-eat (RTE) commercially processed in the yogurt refrigeration unit was not properly dated for disposition after opening.

      • Observed risotto pasta 60F in prep cooler at an improper cooling temperature. Prepped at approximately 11am found at 1:50pm. Cooked cooled chicken 45F, 49F prepped (cut and placed in portion bags) at approximately 11:30am

      • A carton with one raw shell egg was stored over ready to eat vegetables in the one reach in cooler. Raw burger patties were stored over cooked chicken breasts in the stand up cooler.
      • An irreversible registering temperature indicator was not provided for the hot water mechanical warewashing operation.

      • Establishment is operating without a certified food manager.
      • Observed hand sink to be used to store washing clothes.
      • Observed that handwashing sign in customer/only restroom has a faded sign where reminder should be. Handwashing signs are not handsink by pizza cooker, please add instructions on how to wash hands at all hand sinks.
      • Observed facility to have Quat test strips with an expiration date of "July 1, 2021"

    • Date inspected: Oct. 19
    • Total violations: 3
      • Observed an uncovered employee drink with a straw stored on top of a small prep table at the pizza station in the back kitchen.
      • EHS observed food employee rinse out a wet wiping cloth at a hand sink. EHS also observed a food employee rinse off a tray at the hand sink.
      • Individually wrapped turkey and chipotle wraps are cold holding at improper temperatures at the glass cooler in the coffee station. The food employee explained that there is a gap in the door that lets cold air out.
