Ashburn Restaurant Inspections: Violations At 20 Locations

The Loudoun County Health Department inspected a number of restaurants recently in Ashburn and Sterling, including 20 that had violations.

ASHBURN, VA — Officials from the Loudoun County Health Department inspect several restaurants around Dulles, Ashburn, and Sterling from Sept. 8 to Sept. 14, including an array of locations with violations.

As coronavirus restrictions continue to fluctuate, health inspectors are returning to conduct restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.

      • Tuna salad and chicken salad prepared from ambient temperature ingredients noted as improperly cooled to prevent the growth of harmful bacteria.

      • Chicken, meatballs in low boy refrigerator registered at 44°F. As per the person in charge (PIC) said food had been in said unit all day and said unit was constantly opened during busy lunch time.

      • Date marking not provided to cooked chicken and beef pho in walk in refrigerator being held for more than 24 hours.
      • A can of insecticide for home use to kill roaches observed in the kitchen.

      • Handwashing facility next to the three compartment sink in kitchen observed with very low pressure for running water.

      • Observed on line blocked and used to store wash cloths, then the same hand sink used to store cilantro. Other used for general utensil cleaning.
      • Observed 1 Raw Chicken breast at line to be at 50F and Mashed Potatoes in Walk In Unit to be at 47F
      • Observed Sausages at 60F to be thawing in a container of water, Frozen corn thawing in stagnant water, and Frozen Strawberries thawing in stagnant water at the bar area.
      • Observed fruit flies in various areas.

    • Date inspected: Sept. 10
    • Total violations: 1
      • Observed the Ambient Air Thermometer in the 2 stack unit used for pancakes, shredded romaine lettuce, cheddar cheese, etc... to be stuck on 50F regardless of current temperature in unit (as verified by inspector and mgmt thermoprobes.)

      • Observed hand sink without provision of soap.
      • Observed can opener in kitchen with debris and build up on blade.
      • Observed shredded cheese in one-door cooler unit recording temperature at 47 F.
      • Observed eggs cooling in walk-in cooling unit that was wrapped excessively which prevented adequate cooling.
      • Observed a cooler in kitchen that was not holding cheese to proper temperature (47 F)
      • Observed a faucet in the kitchen that was leaking on counter top.
      • Observed grease hood in front prep line accumulated with dust and grease.

      • Walkin cooler fan guards and walls noted in need of cleaning, both main kitchen and mid level cooler. Mid-level cooler also needs maintenance / caulking replaced.

      • There is no Person in Charge present at this operation.
      • The lead employee was not able to correctly prepare sanitizer, take a food temperature or describe the temperatures for cold holding Temperature Control for Safety (TCS) foods.
      • When asked, the food service worker was not able to provide verifiable documentation that all on-duty staff have been trained on employee health policy.
      • When asked, the food service worker was not able to describe or locate a kit or plan for responding to vomiting or diarrheal incidents.
      • One of the hand sinks in the front of the establishment is blocked by a wheeled food storage cabinet.
      • Wares are not sanitized before use after cleaning - the sanitizer in the three compartment sink is testing below the minimum of 150 ppm.
      • Cut tomatoes at 45°F and vegetarian patties at 45°F cold holding at improper temperatures.
      • A pan of egg patties observed thawing at room temperature.
      • The floor sink serving the three compartment sink is slow to drain. When draining a basin in the three vat sink to make fresh sanitizer the staff member was unable to stop water from flooding the floor in the vicinity of the sink.

      • Inspector observed facility to not have a means of testing concentration of bleach disinfectant solution used.

      • Observed Handsink being used to store pots and pans.
      • Observed Raw Chicken Breast and Raw Beef stored above full cases of beer in the walk in unit.
      • Observed Milk in Drink Display to be 45 and 45F. Observed Mayo in 3 DR prep table to be 46F after being left overnight.
      • Observed ambient air thermometer in 3 dr prep table to be off by 8F, missing in second 3 dr prep table, and broken in true drink upright.
      • Observed several fruit flies in the bar and backdoor of the kitchen area.
