Containers were removed - EHS recommends dumping this ice and refilling the well with Ice that has not been used as an exterior coolant.

  • Open canned drink stored on top of the prep cooler over food in preparation or storage.
  • Food employee observed washing a large red plastic colander at the three compartment sink. Colander had been used for raw chicken. Food employee scrubbed it with a sponge and then rinsed it and then placed it on the clean equipment shelf over the sink. Food employee did not sanitize said colander after cleaning.
  • Raw chicken (49F) and cole slaw (59F) cold holding at improper temperatures at the low boy chicken cooler at the front of the kiosk. According to the person in charge, the cooler raises in temp every time the chicken "shaker" machine is used. They explained that the power distribution is off.
  • In use Utensils in three locations of the kiosk are improperly stored in room temperature stagnant water.
  • Food debris and grime built up on the cloth curtain that separates the front point of sale area and the back kitchen of the kiosk.

  • The person in charge (PIC) was not able to produce a verifiable employee health reporting agreement for each of the food employees.
  • Food employee observed sharpening their knife at the hand sink. Hand sinks shall be used for hand washing only.
  • Facility has ceviche on the menu. Facility was not able to produce parasite destruction documentation for the fish (bass) in the ceviche that is served raw/uncooked. Fish according to the person in charge is received frozen farm raised.
  • TCS (time temperature control for safety) foods are cold holding at improper temperatures at the 2 door stand up cooler (beef 74F, potaotes 68F, Sweet potatoes cooling 112F, raw fish 60F) The person in charge informed the EHS that the cooler is broken and should be fixed.
  • This facility has undergone a facility name change and menu change. This facility is now being advertised to the public as Dona Sazon. Ownership did not apply to the health department to update the food permit to reflect the new advertised business name.

  • The prep sink which is a fixed piece of equipment is detached from the wall. Prep sink needs to be resealed to the wall.
  • High touch surfaces such as cooler doors, outside surface of rice warmers, and below equipment shelving observed with an abundance of grime and food debris built up. EHS lifted the cutting board of prep table and observed food remnants and a sticky wet substance covering the top of the prep cooler.

  • The person in charge (PIC) is not properly overseeing the preparation, storage or handling of foods, ensuring effective cleaning processes or monitoring temperatures of foods.
  • No hand towels were available at the hand sink within the kitchen. PIC refilled the hand towel dispenser during the inspection.
  • Raw shell eggs observed stored over ready to eat (RTE) foods in the walk-in cooler (Sauces, cheeses, breads etc.). PIC removed the eggs from the top shelf and placed them ion the bottom shelf.
  • Basmati rice within a rice cooker was tempted at improper hot holding temperature (122F). PIC turned the rice maker back on so that proper temp can be maintained.
  • No date marking is being performed at this facility.
  • A large container of stew was found thawing at room temperature at the back of the kitchen. PIC placed the frozen container in the walk-in cooler to continue thawing.
  • Yogurt, onions, and other food items was observed stored directly on the floor of the walk-in cooler and back of the restaurant. Majority of containers with food were observed with no covering.
  • A spatula that was in active use for the dosa dough was observed stored in a container of stagnant water in a container stored directly on the floor. PIC removed the container and the utensil to the three basin sink to be rewashed.
  • Moderate to severe accumulation of food & soil debris observed on the faces of equipment, on handles, inside top down coolers, and the outside of cooking equipment.
  • Severe accumulation of food & soil debris on walls, floors, behind cooking line, and cooking equipment is observed throughout the facility. Cleaning is not routinely being performed.

Saigon Cafe: 20921 Davenport Drive #108 Sterling, VA 20165

  • Person in charge (PIC) is not properly overseeing the food handling within this facility. Duties of the PIIC are not being carried out in regard to proper cooking and temperature control of foods.
  • Raw shell eggs observed stored over tofu and reconstituted noodles in the reach in cooler on the line. Raw beef found stored over cooked chicken in the walk-in cooler. Raw shell eggs were moved to the bottom shelf, raw beef was moved to under the cooked chicken.
  • The deli slicer was observed stored with visible food particles still on it.
  • EHS observed employee cooking raw chicken on the grill. Once complete, EHS took multiple temperatures of several pieces - all temperatures ranged between 140F-147F. When cooking chicken from a raw form, it must reach an internal temperature of 165F before it is safe too consume. EHS had employee return the chicken to the grill and cook until all pieces reached internal temperatures of 165 F or more.
  • No date marking within the facility. When keeping time/temperature control for safety (TCS) foods longer than 24 hours, a date that the food was prepared/opened, or a discard date not to exceed 7 days from the date that the food was prepared/opened must be on the food/container. Date mark all TCS/RTE Foods.
  • The facility has no thermometer to monitor the cook temperatures of foods that are cooked.
  • Foods observed stored directly on the floor of the walk-in freezer.
