The Loudoun County Health Department found black residue in an ice machine, rodent droppings and more violations during recent inspections.
ASHBURN, VA — Numerous restaurants in the Ashburn and Sterling area recorded violations during health department inspections between April 22 and April 30.
Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

- Temperature control for safety food items such as raw tuna, seared tuna, cheese, chicken and cut leafy greens registered at 49°F in salad prep area. Salad prep cooler registered operating at 47°F. As per the person in charge said food had been in said unit overnight.
- Lower section of the low boy refrigerator holding TCS food items in pizza prep area, pasta prep cooler and salad prep cooler is not maintaining time/temperature control for safety (TCS) foods at 41°F or below.

- Observed a plastic tub filled with water sitting in the handwashing sink nearest the service window. A handwashing sink shall be maintained so that is accessible at all times for employee use and shall not be used for purposes other than handwashing. PIC removed the object from the handwashing sink.
- Observed several food items stored uncovered in cooler including cooked spinach, cooked pumpkin, and cooked carrots. Food shall be protected from cross contamination by storing the food in packages, covered containers, or wrappings.
- Observed sliced tomatoes, chickpeas, and lentil dumplings cold holding at improper temperature (58-60 F) in the front service area of the restaurant. Time/temperature control for safety (TCS) foods must be held at 41F or below to prevent growth of harmful bacteria. PIC voluntarily discarded these foods.
- Observed time/temperature control for safety foods (TCS) in the walk-in cooler not properly dated for disposition. Foods not labeled include saag, cooked pumpkin, carrot pudding, and paneer. PIC stated that most foods are used within 48 hours.
- Observed self-serve packaged foods including shakkarpara and bhujia available for purchase without proper labelling. Food packaged in a food establishment shall be labelled as specified in accordance with all applicable laws and regulations.
- Observed multiple cases of food and buckets of sauces being stored on the floor of the walk-in cooler and freezer. Food shall be protected from contamination by storing the food at least six (6) inches above the floor.
- Observed rice scoop stored in stagnant water and ice scoop lying face down in ice bin. During pauses in food preparation or dispensing, utensils shall be stored with their handles above the top of the food, and in a way that prevents cross contamination, including but not limited to storing in running water or storing in water maintained at a temperature of at least 135 in a frequently cleaned container. PIC removed the rice scoop and moved the ice scoop to be cleaned before replacing.
- Observed multiple knives stored dangling from a metal wire rack close to the floor near the left kitchen door. Cleaned equipment and utensils shall be stored where they are not exposed to splashes or dust, and at least six (6) inches above the floor. PIC removed the knives and placed them in the dishwashing area to be cleaned.

Cut leafy greens observed at 71F stored on counter beside sushi bar area hand sink. Observed imitation crab at 51F, cut leafy greens at 52F, crawfish salad at 54F stored in walk in cooler. Time/temperature control for safety foods shall be stored at or below 41F.
- Observed container of uncovered leafy greens stored directly beside the hand sink and beneath the paper towel holder. Foods shall be stored where not exposed to splash, dust, or other contamination. Many containers of food stored directly on floor in walk in freezer. Food shall be stored at least 6 inches off floor.
- Observed several bulk food containers with single-use containers stored inside for dispensing of food. Single-use articles are designed for one time use only.
