Warm Dairy Products: Burke Restaurant Violations

BURKE, VA — Fairfax County regularly conducts health inspections for local restaurants. The frequency of inspections on the type of food served and how it is prepared.

“In our experience, it is unrealistic to expect that a complex, full-service food operation can routinely avoid any violations,” states the Virginia Department of Health’s website.

Here are some of the violations from recent inspections in July and late June. Among the violations were raw foods that were measured at improper temperatures when heated up and refrigerated. The violations, found at Springfield Mall's Silver Diner, were corrected. Also included are restaurants that passed with no health violations.

violations: sausage hot holding at improper temperature, foods cold holding at improper temperatures, coolers not operating properly, floors, walls, shelves in need of cleaning, cutting boards not able to be properly sanitized due to scratching

violations: raw chicken stored next to raw beef, container with no handle used to scoop rice

Veronica's Bakery and Cafe: 6354-B Springfield Plaza, Springfield, VA 22150, last inspection: July 11

violation: ice bin not properly cleaned
