Low Hot Water, Refrigeration Problems Cited In Fredericksburg

Five Fredericksburg food establishments were cited July 22-27 for hot water, refrigeration, plumbing and other violations.

FREDERICKSBURG, VA — Public health inspectors cited five Fredericksburg food establishments for violations between July 22 and July 27, according to reports from the Rappahannock Area Health District.

Findings included inadequately heated water, refrigeration and plumbing problems, improper utensil storage and missing food-safety documents.

Inspection reports reflect conditions observed during each visit. The reports show that employees corrected several violations while inspectors were present, including washing produce and signing an employee health policy.

July 22 Inspections

Inn At The Olde Silk Mill

Inspection date: July 22

The operator could not provide written procedures for responding to vomiting or diarrheal incidents, and inspectors supplied a sample document. Hot water at an employee restroom handwashing sink measured 73 to 75 degrees, below the required minimum of 100 degrees.

The operator also lacked written procedures for using time instead of temperature to control milk left in carafes for as long as two hours and could not provide a thin-probe food thermometer. Coffee stirrers and disposable forks were displayed with their food-contact and lip-contact surfaces exposed.

Inspectors also cited missing and damaged wall tiles, chipping paint, an inadequately finished windowsill and lighting of 1.5 foot-candles in a storage room where at least 10 foot-candles were required.

The inspection occurred while the lodging facility had no guests and was not serving food. The report also noted ice buildup in a freezer; boxes of disposable articles on the floor; coffee decanters stored under a handwashing sink; and the lack of a three-compartment sink for washing coffee equipment. The operator said the equipment was taken to a permitted catering kitchen behind the building, and inspectors said commissary authorization would be provided.

An employee was preparing food without a beard guard, according to the report. Inspectors also found heavy ice buildup inside chest freezers, a dirty shelf on the service line, dirty wire shelving throughout the kitchen and three kitchen light fixtures that were not working.

An employee was cutting limes without first washing them. The person in charge instructed the employee to wash the limes before cutting them. Inspectors also found that a kitchen handwashing sink was coming loose from the wall.

July 24-27 Inspections

El Jimador Azteca Mexican Family Restaurant

Inspection date: July 24

During a follow-up inspection, the operator submitted a photograph showing that hot water at the bar handwashing sink reached about 85 degrees. Handwashing sinks are required to provide water at a minimum of 100 degrees, and the operator was instructed to contact a plumber.

The mobile food unit's operator could not provide an employee health policy or written procedures for cleaning up vomiting and diarrheal incidents. Inspectors provided both documents in Spanish, and the operator signed the employee health policy during the inspection.

The unit's only refrigeration equipment, a preparation cooler, was holding at 45 degrees, and inspectors said it did not provide adequate refrigeration storage. Digital thermometers in the preparation cooler and upright freezer did not work properly. The faucet at the three-compartment sink also did not fully reach the wash and rinse basins, and inspectors said a longer gooseneck faucet was needed.

The nonoperational inspection was conducted for permit renewal, and no food was being held on the unit. The report said a food permit would be issued after the operator submitted a photograph showing the preparation cooler holding at 41 degrees or lower.
