FREDERICKSBURG, VA — Public health inspectors cited three Fredericksburg establishments for violations between July 28 and July 31, according to reports from the Rappahannock Area Health District.
Findings included the lack of an accessible handwashing sink, leaking plumbing, improperly held hash browns, inadequate hair restraints and personal belongings stored near disposable food items.
Inspection reports reflect conditions observed during each visit. The reports show that employees corrected some violations while inspectors were present, including reheating food and relocating personal belongings.

Inspectors found no accessible handwashing sink in the warewashing area. Employees had to leave that area to use the kitchen's only handwashing sink near the cooking area. The facility was planning to install another sink, and the operator was advised that Stafford County might require a plumbing permit.
The follow-up report also directed the establishment to stop using its dishwasher until a technician serviced it. It said a change in ownership occurred in April and the facility had operated without a valid food permit because permits cannot be transferred between owners.
The report said the facility was in substantial compliance and that a Virginia Department of Health food permit was emailed to the operator. The operator also submitted photographs documenting a backflow preventer on the ice machine and coffee brewer, an employee health policy, the dishwasher's data plate and compliant nitrate water-sampling results.

A slight leak remained in the plumbing beneath a handwashing sink during a follow-up inspection. The report said the leak had improved since the previous day but had not been fully repaired. Another follow-up was scheduled for Aug. 3.

Hash browns in a hot-holding unit measured 120 degrees instead of the required minimum of 135 degrees. An employee said they had been placed in the unit about 10 minutes before the temperature check. The employee reheated them to 190 degrees during the inspection.
Inspectors also saw three employees preparing food while wearing visors that left their hair exposed. A purse and two beverages were stored next to or above disposable food items, and the person in charge moved the belongings during the inspection.
