Awesome Eats at My Catering Food Truck

My Phuong's passion for cooking translates into her varied menu.

I've been driving past a little mobile food truck along Rt. 1, Jefferson Davis Highway in Massaponax for the last several weeks.  This week I decided to turn around and check it out. I'm glad I did.

Food trucks, mobile grub, meals-on-wheels, check wagons or whatever you refer to them by are exploding on the streets of just about every big foodie city across America.  And for good reason.  They provide fresh made eats that are quick and inexpensive and also allow for food creations and combinations (like fried chicken on waffles) that push the envelope on the more traditional offerings expected at brick and mortar establishments.

Upon walking up to the order counter, I see a menu made of pictures of the food, and I am immediately surprised and intrigued.  Shrimp spring rolls I was not expecting, but pork chops was totally off the radar. The pork chop was the size of two fists put together and is soaked in a fresh-made marinade overnight before being cooked to a moist, flavorful and tender piece of meat.

Teriyaki chicken is done in the same fashion, rendering the boneless thighs finger-licking delicious.  The stir fry can be ordered with shrimp or chicken, and it is loaded with fresh, crisp vegetables.  The fried rice dish has lots of egg fried with the rice that you not only see it, you can taste it.

Owner and cook of My Catering is a small powerhouse of a women named My Phuong, which explains the name My Catering. She loves to cook and has worked in the kitchen of many Chinese restaurants over the years, and even as a personal chef for a renowned doctor in Georgetown. Her passion for cooking started while still in high school when her homemade apple pie won 1st place in a state-wide contest.

An item called Banh Mi is a famous Vietnamese sub-like sandwich consisting of sliced pork that has been soaked in the special marinade over night and then cooked low and slow for seven hours, along with cilantro, tomato, cucumber, carrot and fresh-sliced jalapeno peppers.  A sauce she makes with vinegar, honey, soy sauce and some secret seasonings finishes it off. This sandwich is offered about every other day, and it sells out fast.

My also makes a whopper of a burger that ends up weighing over a pound when assembled.  She starts by forming fresh ground beef simply seasoned with garlic powder, salt and pepper, and then grills it to order.  Topped with sautéed onions, cheese, and wait for it -- a fried egg -- then finished with lettuce and sliced tomatoes. Fresh jalapenos are optional. The yolk of the fried egg coats the cheese and beef when you bite into it.  Messy, yes, but if you eat there she serves everything on ceramic plates.
