Awesome Eats @ Pueblo's Tex Mex Grill

Holy Guacamole! Awesome Eats is off to an amazing start with Chef Don Julian, and his recipes dating back many generations. So we asked him what on his menu would be "Top Chef" worthy, and here are the answers.

“We braise our pork in tequila, Coke, lemon, and orange wedges for hours to give it a really nice caramelized glaze," he said.  "Our carnitas are really tender and really flavorful.  Best Pork in Town!” 

Now that sounds awesome, but I pressed him for another item they kick out of the park. 

“People don’t expect our fish tacos to be as great as they are. They are amazing! We have many regulars that come back repeatedly just for our famous fish Tacos. And everything is made from scratch daily, even our light, crisp chips and salsa," he said.

Pueblo’s has been open in Fredericksburg for over a year and a half, and although I have been in once or twice, this was my first fish taco trip.  Hunks of fresh, moist, flavorful tilapia coated with a light, crispy crust filled the bottom of the corn taco. Topped with freshly shredded multi-colored cabbage and a vibrant Pico de Gallo, and half of a lime to squeeze all made this fish taco rock!  I must say, too, that the tortilla chips are the best I have ever tasted, well I actually devoured them.  The chips are thin and light, not thick and hard, and before I knew it the basket was empty.
