Fredericksburg Health Inspections: La Delizia Pizza, Subway

The Rappahannock Area Health District recorded violations at several facilities around Fredericksburg during recent restaurant inspections.

FREDERICKSBURG, VA — Several facilities around the Fredericksburg area recorded violations during health department inspections between Dec. 21 and Dec. 27.

In Virginia, all food service locations are supposed to be inspected at least once per year. Facilities with higher risk factors may be inspected as often as four times per year, according to the Virginia Department of Health.

Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected. Sometimes, the follow-up inspection only considers the most important "priority" violations.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Depending on the results of the inspection, the health department can pursue several actions.

They can issue a permit for the restaurant to continue serving food, they can schedule a follow-up inspection to determine if violations have been rectified, or they can temporarily shut down an establishment until certain issues are solved.

  • Holiday Inn Express, 15 Salisbury Drive Stafford, VA 22554
    • Date inspected: Dec. 21
    • Total violations: 3
      • Observed 6 cartons of liquid eggs sitting on the counter top measuring 66'F. The eggs were discarded.
      • Observed that the grout in the kitchen requires cleaning.
      • Observed 8 lights out in the kitchen.
  • Cavalier Family Skating Center, 1924 Jefferson Davis Highway Stafford, VA 22554
    • Date inspected: Dec. 21
    • Total violations: 4
      • Observed pizza sauce (44°F) and mozzarella cheese (46'F) stored in large plastic containers overnight in the reach in cooler (38'F). Recommended purchasing stainless steel containers. Items were discarded.
      • Observed dust on the liners used as food contact surfaces for the basket stored under a soiled fan. Items were relocated.
      • Observed the floors in need of cleaning throughout the facility.
      • Observed cracked floor tiles throughout the facility and several holes in the wall in the mop room where chemicals are being stored.
  • Subway # 53689, 9110 Old Battlefield Blvd. Ste. 108 Spotsylvania, VA 22553
    • Date inspected: Dec. 21
    • Total violations: 4
      • The Person in Charge was unable to provide documentation of training relating to the Employee Health Policy for this facility Facility provided with Employee Health Policy that was reviewed and signed by all available employees.
      • Facility was unable to provide written procedures for the clean-up of vomiting or diarrheal events. Facility provided procedures during inspection.
      • Observed food employees without proper hair restraints in kitchen area of food facility.
      • Observed clean food equipment in warewashing area, stored wet in a manner that does not allow for draining and/or air drying (wet nesting).
  • La Delizia Pizza, 10041 Patriot Hwy Fredericksburg, VA 22407
    • Date inspected: Dec. 27
    • Total violations: 1
      • Observed garlic in oil sitting at ambient temperatures holding at 61F for <4 hours. Food relocated to refrigeration to cool.
