Fredericksburg Restaurant Inspections: Handwashing, Cold Holding Violations Reported
Health inspectors cited Fredericksburg-area restaurants for cold holding, handwashing and cleaning issues June 1-9.
FREDERICKSBURG, VA — Several Fredericksburg-area food establishments were cited for health code violations during inspections conducted from June 1-9, according to reports from the Rappahannock Area Health District.
The reports below include only establishments with violations. Restaurants or inspections with no violations were not included.
Firehouse Subs, 1465 Stafford Market Place 101 in Stafford, was inspected June 9. Inspectors observed the interior of the ice machine in need of cleaning, heavily stained red cutting boards and shelving and equipment exteriors that needed cleaning. The report said food-contact surfaces and nonfood-contact surfaces should be cleaned often enough to prevent contamination or soil buildup.

Wendy's Store #10802, 9910 Southpoint Parkway in Fredericksburg, was inspected June 9. Inspectors found two trays of hard shell eggs in a cold holding well with surface temperatures of 51 to 53 degrees after the eggs had been placed in the unit at 6:30 a.m. The eggs were discarded at 10:30 a.m., and the inspector and operator discussed keeping only one tray of eggs in the cold holding well.
Harry's Alehouse, 5737 Plank Road in Fredericksburg, was inspected June 8. The person in charge could not provide a certified food protection manager certificate. The report said at least one supervisory employee with authority over food preparation and service must be a certified food protection manager. The person in charge had signed up for ServSafe classes and planned to email a copy of the certificate.

Hope Heroes Southern Kitchen, 9677 Patriot Highway in Fredericksburg, was inspected June 5. Inspectors found that the menu item “(2) Eggs your way” did not have an asterisk linking it to a consumer advisory, even though eggs could be ordered undercooked. The operator and inspector discussed adding an asterisk to the menu.
Moo Thru, 5043 Plank Road in Fredericksburg, was inspected June 5. An employee was observed washing hands in the three-compartment sink. The employee rewashed hands in the hand sink, and the inspector advised staff to wash, rinse and sanitize the three-compartment sink basins before washing dishes. The inspector also advised relocating chairs that made the hand sink harder to access.
Subway inside Walmart, 10001 Southpoint Parkway in Fredericksburg, was inspected June 5 during a follow-up. Inspectors found a quaternary ammonium test kit that had expired June 1, 2025, and plumbing systems in poor repair, including a mechanical dispenser with improper chemical concentration, a dispenser that continued dispensing wash solution when the knob was off and a prep line hand sink that leaked when water was turned on. Staff were told to manually pour sanitizer into the basin until maintenance was performed and to send a photo of a new test kit when it arrived.
Residence Inn, 60 Towne Centre Blvd. in Fredericksburg, was inspected June 5. Inspectors found milk and yogurt products cold holding above 41 degrees in a glass-front reach-in cooler, including whole milk at 43 to 50 degrees, nonfat milk at 45 to 49 degrees, low-fat milk at 43 to 48 degrees and yogurt at temperatures up to 58 degrees. The items were voluntarily discarded. Inspectors also found no thermometer in the cooler and soiled kitchen floors, especially under and behind equipment.
Umi Japanese Cuisine, 1500 Emancipation Highway in Fredericksburg, was inspected June 4. The person in charge could not provide written procedures for cleaning up vomit and diarrhea, and an employee touched clean dishes after handling dirty dishes and other soiled surfaces without washing hands. The person in charge instructed the employee to wash hands and put the dishes back through the machine. Inspectors also found the men’s restroom hand sink reached only 74 degrees, sinks needed to be resealed to walls, nonfood-contact surfaces were soiled and kitchen floors and walls needed cleaning.
Orale Mexican Taqueria, 5 Copper Court in Fredericksburg, was inspected June 4. Inspectors found an unsigned employee health policy, two unlabeled chemical bottles, a food thermometer that had not been calibrated, cardboard boxes being reused to store equipment, no hose bibb backflow preventer for the freshwater hose, black buildup inside the wastewater tank and plumbing and floors in need of cleaning. During the inspection, the employee health policy was reviewed and signed, and the chemical bottles were labeled.
Duck Donuts, 1509 Central Park Blvd. in Fredericksburg, was inspected June 4. Inspectors found multiple nonfood-contact surfaces in need of cleaning, including icing containers, hood vent filters, shelves, bulk ingredient containers, cooler surfaces, trash cans and the inside bottom of an undercounter reach-in freezer. The report also said the kitchen floors were soiled and needed regular cleaning.
Pupuseria Elizabeth LLC, 11105 Leavells Road, Unit 9, in Fredericksburg, was inspected June 4. The person in charge could not provide an employee health policy, and inspectors observed utensils stored in containers of water that measured 75 to 83 degrees. The person in charge removed the container of water during the inspection, and inspectors discussed keeping utensils in water at 135 degrees or higher during operation.
Quickway Hibachi, 28 South Gateway Drive, Suite 107, in Fredericksburg, was inspected June 1. Inspectors found the person in charge could not provide an employee health policy, an employee did not wash hands before cooking food, a food employee used the same utensils between raw and cooked foods, food-contact containers were soiled, butter on the cookline was 60 degrees, plastic food containers were being reused for food, nonfood-contact surfaces needed cleaning, a grease receptacle was heavily soiled, rust was observed on restroom walls and floors and walls needed deep cleaning. The employee was instructed to wash hands.
