McLEAN, VA — Sewage backing up near a three-compartment sink, live flies, a chemical bottle stored above sugar and blocked handwashing facilities were among the violations cited during recent inspections of McLean and Tysons food establishments.
The Fairfax County Health Department reports covered seven inspections conducted between Aug. 3 and Aug. 6. Perch Putt's two separately permitted food operations were inspected on the same day.
Inspection reports reflect conditions observed during a specific visit. Several violations were corrected during the inspections, including food that was discarded, a blocked sink that was cleared and improperly stored items that were relocated.
Lei'd Poke
8032 Leesburg Pike, Suite D, Vienna, VA 22182
Inspection date: Aug. 3
Inspectors observed sewage backing up from the grease trap or a drainpipe under the three-compartment sink. A manager immediately submitted a work order and was directed to provide proof of repairs within three days. Cooked shrimp, broccoli and brisket were being held below the required 135 degrees in a steam table. The restaurant decided to use time rather than temperature as a safety control and discard the food within three hours. Kiwi coconut prepared July 23 had been kept longer than seven days and was discarded. Inspectors also found that the menu lacked proper disclosures for foods containing raw or undercooked ingredients, an employee washed their hands in a food-preparation sink and sushi rice lacked a label showing the end of its four-hour holding period. The employee rewashed their hands in a designated sink, and staff labeled the rice during the inspection.
Dunkin'
1495 Cornerside Boulevard, Vienna, VA 22182
Inspection date: Aug. 4
A chemical spray bottle was stored on top of a bulk sugar bin, according to the report. Staff moved it to the chemical-storage area. A coffee-filter holder was blocking a handwashing sink and was removed during the inspection. The restaurant lacked a food thermometer and did not have a certified food manager present, both repeat violations. The report said a certified manager had also been absent during several previous routine inspections. The inspector said continued failure to have a certified manager on site during all operating hours could result in closure and indicated that the matter would be referred for enforcement if it was not resolved within 30 business days. A purse and book bag stored near coffee lids were moved to a designated employee-storage area.
Andy's Pizza
2001 International Drive, McLean, VA 22102
Inspection date: Aug. 5
Cooked onions, chicken tenders and marinated chicken stored overnight measured between 42 and 47 degrees, indicating that they had not cooled to 41 degrees within the required time. The food was discarded, and the inspector reviewed cooling methods with the certified food manager. The violation was marked as a repeat finding. Hot water at the bar handwashing sink measured 89 degrees instead of the required minimum of 100 degrees. Two lights beneath the exhaust hood were burned out. A soda gun was also stored in stagnant water at room temperature, another repeat violation, and was moved to its designated holder.
Perch Putt
1805 Capital One Drive, 11th Floor, Tysons, VA 22102
Inspection date: Aug. 5
Separate reports were issued for the establishment's two permitted food operations, identified as Perch Putt I and Perch Putt II. Both lacked a test kit for measuring the concentration of quaternary-ammonia sanitizer. Follow-up inspections were required within 10 days.
Big Buns
1336 Chain Bridge Road, Suite G, McLean, VA 22101
Inspection date: Aug. 6
Pico de gallo, sliced cheddar, raw ground beef and raw chicken measured between 44 and 48 degrees in a four-drawer cooler. All of the food was discarded. No certified food manager was present when the inspection began, but one arrived during the visit. The cooler measured 47 degrees and was unable to keep food at or below 41 degrees. The restaurant contacted a repair technician and was directed not to use the unit for food requiring temperature control until it was repaired. The report said the routine inspection was conducted in conjunction with a confirmed foodborne-illness investigation and noted possible contributing factors related to supervision and temperature-controlled food.
Sir Sandwich Co.
8496 Tyco Road, Unit B, Vienna, VA 22182
Inspection date: Aug. 6
Inspectors observed live flies in the rear preparation and front service areas and directed the restaurant to obtain pest-control service within 10 days. The three-compartment sink's wash water measured 82 degrees instead of the required minimum of 110 degrees, while water at a kitchen handwashing sink also measured 82 degrees instead of at least 100 degrees. The certified food manager could not provide a food thermometer or a test kit for measuring sanitizer concentration. The manager ordered both items during the inspection. The report said the water heater was not working properly and directed the restaurant to arrange urgent service for the sinks and water heater.
