McLEAN, VA — Live and dead cockroaches, raw salmon stored above ready-to-eat food and missing sanitizer test kits were among the violations cited during recent inspections of McLean and Tysons food establishments.
The Fairfax County Health Department reports covered five inspections conducted between Aug. 7 and Aug. 17.
Inspection reports reflect conditions observed during a specific visit. Several violations were corrected during the inspections, including food that was discarded or relocated, a blocked handwashing sink that was cleared and refrigeration equipment that was taken out of service.
Balducci's
6655 Old Dominion Drive, McLean, VA 22101
Inspection date: Aug. 7
Deli turkey, roast beef, ham and smoked Gouda measured between 45 and 49 degrees in a display case. The person in charge discarded the food. Raw salmon was stored above cut tomatoes in another cooler and was moved below prepared and cooked foods. A handwashing sink in the dish area was blocked but was made accessible during the inspection. The display case measured 47 degrees and was unable to maintain food at or below 41 degrees. All food was removed from the case, a maintenance request was submitted and staff were directed not to use it for food requiring temperature control until it was repaired.

Inspection date: Aug. 10
A ham-and-cheese croissant, croque ham and quiche Lorraine measured between 50 and 51 degrees in a display case and were discarded. The case was taken out of service. Inspectors also found no heat-sensitive test strips for checking the mechanical dishwasher's hot-water sanitizing cycle. The person in charge ordered the strips during the inspection. The menu lacked a consumer advisory for smoked salmon that may be served raw or undercooked, and the establishment did not have the required supplier statement documenting parasite-control practices for the farm-raised salmon.

Inspection date: Aug. 13
Inspectors observed two live adult cockroaches and three dead cockroaches of different life stages in the first-floor kitchen and downstairs storage area. The person in charge said a certified pest-control technician would be contacted. Almond milk measured 49 degrees and soy milk measured 50 degrees in a two-door cooler, and both were discarded. No certified food manager was present, and the restaurant lacked a test kit for checking quaternary-ammonia sanitizer concentration. The cooler measured 49 degrees and was taken out of service while a repair technician was contacted.

Inspection date: Aug. 13
The Starbucks inside Safeway lacked a test kit for checking the concentration of quaternary-ammonia sanitizer. A follow-up inspection was required within 10 days.

1644 Boro Place, Tysons, VA 22102
Inspection date: Aug. 17
Pico de gallo measured 43 degrees after being cooled for four hours and was discarded. The finding was marked as a repeat violation. Inspectors also found that a garnish cooler measured 55 degrees and a salad preparation cooler measured 43 degrees. The restaurant was directed to arrange urgent service and not use either unit for food requiring temperature control until the coolers were repaired.
