15 Health Violations At Herndon Eatery | Reston/Herndon Restaurant Inspections

Fairfax County reported violations at Metro Cafe, and others on Aug. 31-Sept. 5.

RESTON/HERNDON, VA — Fairfax County regularly conducts inspections of Reston and Herndon restaurants. Reports are generally posted about a week after the inspection. We've listed the violations from inspections at local restaurants -- including a staggering 15 violations at Metro Cafe in Herndon -- from Aug. 31-Sept. 5, the most recent dates available.

Critical violation: Observation (CORRECTED DURING INSPECTION): A number of items across the prep tops at both sautee stations were not cold holding below 41F: talnatalo sauce(50F); artichoke hearts(50F); sliced tomatoes(60F); caesar dressing(50); milk in bar refrigerator.

Critical violation: Observation: Due to improper operation of the hot water, mechanical warewashing machine, the thermolabel did not turn black, indicating that food-contact surfaces of equipment and utensils are not being adequately sanitized. Service vendor was called during the inspection.

Non-critical violation: Observation: The following refrigeration unit is not operating properly and is unable to maintain cold food at or below 41°F: beer cooler at bar; both prep tops at the sautee line.

Non-critical violation: Observation: The person in charge (PIC) has a valid certificate of successful completion of a Certified Food Manager (CFM) exam but does not possess the CFM card issued by ORS Interactive, Inc.

Non-critical violation: Observation (CORRECTED DURING INSPECTION): Insect control device is located over food contact surfaces at the wait station.

Critical violation: Observation (CORRECTED DURING INSPECTION): Upon discussion with the person-in-charge, one or more of the elements of an effective employee health policy is either missing or incomplete. A complete employee health policy is required to be in place at the food establishment. At the time of this inspection, the Health Department provided and reviewed handouts and resource information in a red folder labeled "Employee Health Policy."

Critical violation: Observation (CORRECTED DURING INSPECTION): The following cooked potentially hazardous foods are not being adequately cooled from 135°F to 70°F within 2 hours Hashbrowns, Scrapple, Sausage cooling for 3 hours in the walkin cooler observed at 79, 72, 73°F.

Critical violation: Observation (REPEAT) (CORRECTED DURING INSPECTION): The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: 1) Cheese (65F)--#1, 2) Ham (45F), Turkey (45F), Cheese (45F), Roast Beef (46F)--#2

Critical violation: Observation (REPEAT) (CORRECTED DURING INSPECTION): The following ready-to-eat food that is made using a combination of ready-to-eat, potentially hazardous ingredients is not properly dated for discard using the date of the first-prepared ingredient: 1) Tuna salad, 2) Ham, 3) Turkey, 4) Roast Beef, 5) Cheese

Critical violation: Observation (CORRECTED DURING INSPECTION): Observed that poisonous and toxic materials are not properly stored to prevent the contamination of food. Observed joint compound and paint being stored alongside rice, flour and cornstarch.

Non-critical violation: Observation (CORRECTED DURING INSPECTION): Observed hashbrowns cooling in six inch deep covered containers in the walkin cooler.

Non-critical violation: Observation: The nonfood-contact surface of the following equipment is not corrosion resistant, nonabsorbent, and/or smooth: 1) Observed cardboard lining shelving, 2) Observed unsealed wooden shelving in the dry storage area.

Non-critical violation: Observation (CORRECTED DURING INSPECTION): The following refrigeration unit is not operating properly and is unable to maintain cold food at or below 41°F: Observed walkin cooler at 45F.

Non-critical violation: Observation: The door gaskets of the following unit(s) are (missing, damaged): 1) Walkin cooler

Non-critical violation: Observation: Observed the mop sink to be leaking.

Non-critical violation: Observation: Observed cardboard boxes being used as floor mats.

Non-critical violation: Observation: Light bulb(s) in the walkin cooler are not covered by a protective shielding.

Non-critical violation: Observation (CORRECTED DURING INSPECTION): Observed flystrips being hung over food prep tables.

Non-critical violation: Observation: Observed that the following is not maintained in good repair: 1) Observed burned out lights

Non-critical violation: Observation (CORRECTED DURING INSPECTION): There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solutions.

Non-critical violation: Observation (REPEAT) (CORRECTED DURING INSPECTION): Observed that paper towels were not provided at each handwashing sink.
