These days our favorite breakfast consists of :
Berry Cherry Smoothie, http://wp.me/pz5NC-10v, and Spinach and Feta Omelet Muffins, http://wp.me/pz5NC-Xt. Both are easy to make and can be made ahead so in the morning, you can grab and go! Off to a healthy start!
And I'm thinking about taking both the omelet muffins and the smoothie to my mom who doesn't cook anymore. I plan to put a few omelet muffins into a container and mark it with an expiration date (very important for my mom who keeps things forever) and also with instructions on how to heat it up. For the smoothie, I'm going to freeze it in silicone muffin pans. Then when frozen, I'll pop the "muffins" into a plastic bag for the freezer. This way she can defrost the smoothie "muffins" one by one.
