7 Critical Violations At Westin Reston | Reston/Herndon Restaurant Inspections

Fairfax County reported violations at Blue Line Cafe, Breakers Billiards, and Westin Reston Heights on Sept. 27-29.

RESTON/HERNDON, VA — Fairfax County regularly conducts inspections of Reston and Herndon restaurants. Reports are generally posted about a week after the inspection. We've listed the violations from inspections at local restaurants -- including a staggering seven critical violations at Westin Reston Heights -- from Sept. 27-29, the most recent dates available.

Non-critical violation: Observation (REPEAT): Interior of ice machine was observed in need of cleaning.

Critical violation: Observation (CORRECTED DURING INSPECTION): The person in charge failed to state the required temperatures and holding times for the potentially hazardous food items when (1) in refrigerated storage, (2) in hot holding, (3) being cooled and/or (4) being reheated. CFM WAS UNABLE TO ANSWER QUESTIONS ON HOLDING AND COOKING TEMPERATURES OF POTENTIALLY HAZARDOUS FOODS ( PHF)

Critical violation: Observation (CORRECTED DURING INSPECTION): The person in charge failed to explain the correct procedures for cleaning and sanitizing utensils and food-contact surfaces of equipment.CFM WAS UNABLE TO ANSWER QUESTION ON WHAT SANITIZER IS BEING USED, WHERE WAS THE TEST STRIP, WHAT THE CORRECT CONCENTRATION OF THE SANITIZER SHOULD BE.

Critical violation: Observation (CORRECTED DURING INSPECTION): A food handler was observed drinking from an uncovered beverage container while in the kitchen. OBSERVED THE COOK DRINKING FROM AN UNCOVERED GLASS OF ICE TEA IN THE KITCHEN AREA.

Critical violation: Observation (CORRECTED DURING INSPECTION): The shellstock offered for sale or service bears no label or has a label that does not contain all the information as specified in law.OBSERVED TWO CONTAINERS OF SHELL FISH IN THE BOTTOM SHELF OF THE WALK IN REFRIGERATOR . BOTH CONTAINERS HAD LOOSE SHELL FISH WITH NOTHING TO IDENTIFY SOURCE, THEY AHD BEEN REMVOED FROM THEIR ORIGINAL BAG AND HAD NO LABEL .

Critical violation: Observation (CORRECTED DURING INSPECTION): Unwrapped or uncovered food in the following location where the food is subject to contamination: OBSERVED COOK ABOUT TO PLACE A COLLANDER OF COOKED BACON THAT WAS ON FLOOR BACK INTO THE LOWER DRAWER OF THE LOBOY NEAR THE GRILL.

Critical violation: Observation (CORRECTED DURING INSPECTION): Unwrapped or uncovered food in the following location where the food is subject to contamination: OBSERVED COOK ABOUT TO PLACE A COLLANDER OF COOKED BACON THAT WAS ON FLOOR BACK INTO THE LOWER DRAWER OF THE LOBOY NEAR THE GRILL.

Critical violation: Observation (CORRECTED DURING INSPECTION): There is no Certified Food Manager present at the beginning of the inspection. KITCHEN STAFF WERE COOKING, PREPPING AND CLEANING WITHOUT A CERTIFIED FOOD MANAGER (CFM) ON PREMISES. THE MANAGER WAS NOT ON SITE AND THE FOOD ESTABLISHMENT WAS NOT UNDER THE IMMEDIATE CONTROL OF A CFM.

Non-critical violation: Observation (CORRECTED DURING INSPECTION): The handwashing facility located at the COOK LINE is blocked WITH A CUTTING BOARD THAAT IS BEING USED AS A SHELVING TO STORE CONTAINERS AND OTHER ITEMS , preventing access by employees for easy handwashing. THERE IS ALSO ANOTHER HAND SINK ADJACENT TO THE SHELVES TO STORE WASHED POTS AND PANS WHICH HAS A GRILL PLATE AND OTHER ITEMS BLOCKING IT

Breakers Billiards Cafe, 2445 Centreville Rd 4th Floor, Herndon

Critical violation: Observation (CORRECTED DURING INSPECTION): The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: sliced tomatoes 53F, sour cream 54F, salsa 53F, gorgonzala 54F, butter 65F all in Delfield 3dr preptop cooler

Non-critical violation: Observation (CORRECTED DURING INSPECTION): The following farm-raised fish served raw or partially cooked were observed without a written statement from the supplier stating that the fish were raised and fed according to 3-402.11(B)(3): salmon

Non-critical violation: Observation (CORRECTED DURING INSPECTION): There was no quaternart ammonia test kit located in the facility for monitoring the concentration of the chemical sanitizing solutions.

Non-critical violation: Observation (CORRECTED DURING INSPECTION): The following refrigeration unit is not operating properly and is unable to maintain cold food at or below 41°F: Delfield 3dr preptop cooler 57F

Non-critical violation: Observation (CORRECTED DURING INSPECTION): Clean utensils were observed stored with the food-contact surface facing upward in the kitchen.

Non-critical violation: Observation (CORRECTED DURING INSPECTION): Observed the handsinks at the main bar and upstairs bar being used a dumpsinks.
