DULLES, VA — Two Washington, D.C., chefs are bringing new dishes to international flights from Dulles through United Airlines' collaboration with Chef's Table, the brand behind the acclaimed Netflix culinary series.
Chefs Isabel Coss and Matt Conroy developed the seasonal menu using French cooking techniques and Mexican influences associated with their D.C. restaurants Lutèce, Pascual and Maison Bar À Vins, according to United.
The dishes are available beginning in August on nearly two dozen long-haul flights from Dulles that serve lunch or dinner. Destinations include Cape Town, London, Paris, Rome, Tokyo and São Paulo.
The first menu includes a melon and burrata appetizer served with chorizo vinaigrette and opal basil.
A quinoa salad combines currants, butternut squash, kale and banyuls vinaigrette. The entrée is braised chicken breast in vadouvan coconut curry, accompanied by jasmine rice and roasted brussels sprouts.
United said the selections will rotate seasonally.
"Food has the power to connect people across cultures and distances, making it a natural fit for travel," Coss said in a statement. "I'm thrilled to partner with United and Chef's Table to bring the flavors of Lutèce and D.C. to guests as they begin their journey out of Washington."
Conroy said the project offers an opportunity to introduce travelers to part of the District's culinary identity.
"It's an honor to work with Chef's Table and United for a project that connects people through food," Conroy said in a statement. "The chance to showcase a part of D.C.'s culinary identity to travelers from around the world is incredibly exciting."
The dishes are part of a collaboration between United and Chef's Table, the brand behind the Netflix series of the same name. Coss and Conroy represent Washington in the program, which also includes chefs from London, Tokyo, Los Angeles and San Francisco.
The special menu is limited to United Polaris international business-class passengers. Eligible travelers can preorder the meals through United's website or mobile app beginning five days before departure and continuing until 24 hours before the flight.
Aaron McMillan, United's managing director of hospitality programs, said the dishes were designed with the practical conditions of air travel in mind.
The collaboration also includes original video content about the chefs' creative process, including ingredient sourcing, recipe testing and preparation in the airline's test kitchens, according to United.
