Herndon Eatery's Ceiling Sagging Under Rodent Poop: Inspections

Fairfax County reported violations at China King, Busara, and others on Dec. 27-29.

RESTON/HERNDON, VA — Fairfax County regularly conducts inspections of Reston and Herndon restaurants. Reports are generally posted about a week after the inspection. We've listed the violations from inspections at local restaurants -- including a report of a ceiling tile sagging under the weight of debris and rodent poop at China King in Herndon -- from Dec. 27-29, the most recent dates available.

Busara Restaurant, 11964 Market Street, Reston

Critical violation: Observation (CORRECTED DURING INSPECTION): Observed plates with personal employee food being stored with rice in warmer. Plates were removed and rice was discarded.

Critical violation: Observation (REPEAT): When tested, the low temperature, chemical sanitizing warewashing machine was observed with a sanitizing rinse concentration of less than 50 ppm chlorine solution.

Critical violation: Observation (CORRECTED DURING INSPECTION): Equipment food-contact surfaces/utensils were not observed cleaned before any possible contamination. Observed juice from raw chicken on prep counter where plastic food containers were being filled for service.

Critical violation: Observation (REPEAT) (CORRECTED DURING INSPECTION): The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: ricotta cheese (44F) in cooler #5, eggplant caponata (50F) in cooler #6, beef albondingas (48F) in cooler #9. Ricotta and caponata are held out to be served at room temperature.

Critical violation: Observation: A review of the menu with the foodservice operator indicates that there is no consumer advisory for the following food item(s) that may be served raw and/or undercooked: swordfish and shrimp.

Critical violation: Observation (CORRECTED DURING INSPECTION): When tested, the quaternary ammonium compound-based sanitizing solution was observed to be at a concentration less than what is required for effective sanitization of food-contact surfaces of equipment and utensils. Observed the sanitizing solution in the dining area water glass stations with a concentration of less than 150 ppm total quaternary ammonium compound.

Critical violation: Observation (REPEAT) (CORRECTED DURING INSPECTION): The raw and/or undercooked foods provided on the menu, menu board, table tent or brochure do not provide a disclosure statement. EHS reviewed menu with CFM and discused revision. CFM will email menu with changes.

Critical violation: Observation: The permit holder has installed or replaced a warewashing machine. The current water heater does not have the capacity to meet an increase in hourly hot water demands required by the addition of the warewashing machine.

Non-critical violation: Observation: The person in charge (PIC) has a valid certificate of successful completion of a Certified Food Manager (CFM) exam but does not possess the CFM card issued by ORS Interactive, Inc.

Critical violation: Observation (CORRECTED DURING INSPECTION): The following cooked potentially hazardous foods are not being adequately cooled from 135°F to 70°F within 2 hours chicken cooling for 4 hours in the prep table observed at 77°F.

Critical violation: Observation (REPEAT) (CORRECTED DURING INSPECTION): The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: chicken (55F) in the prep table #1 and chicken (55F) in the prep table #2.

Critical violation: Observation (CORRECTED DURING INSPECTION): Working containers of poisonous and toxic materials are not properly labeled with a common name. Surface cleaner in spray bottles for wiping tables not labeled.

Non-critical violation: Observation: Observed the handsink at the 3 vat sink being used as a dump sink and the handsink at the grill line being used as a dump sink.

Non-critical violation: Observation: The person in charge is not able to relate how the person in charge, food employees, and conditional employees comply with disease reporting responsibilities and exclusion or restriction of food employees.

Non-critical violation: Observation: Food stored in a location where it is subject to splash, dust or other contamination as follows: vegetables on floor next to 3 vat sink

Non-critical violation: Observation: Observed the following food thawing using an improper method: chicken thawing on counter of 3 vat sink

Non-critical violation: Observation: The cutting board(s) used for cutting chicken are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.

Non-critical violation: Observation: The nonfood-contact surfaces of the following equipment had accumulations of grime and debris: grill line, counters at prep, shelving in back storage.

Non-critical violation: Observation: Openings to the exterior of the building are present along the base of the back door.

Non-critical violation: Observation: Observed holes in floor/wall junction (access point for mice/rats), at service counter, under grill, and above back door; floor tiles cracked at back, near 3 vat sink, ceiling tile falling in bathroom (sagging under debris and rodent poop).

Non-critical violation: Observation: Harborage conditions exist.
