Local Starbucks Risks A Shutdown | Reston/Herndon Inspections

Fairfax County reported violations at Subway, Pokehub, and others on Feb. 12-14.

RESTON/HERNDON, VA — Fairfax County regularly conducts inspections of Reston and Herndon restaurants. Reports are generally posted about a week after the inspection. We've listed the violations from inspections at local restaurants -- including at a Herndon Starbucks, were officials warned that the restaurant risked being shut down due to a lack of a permit -- from Feb. 12-14, the most recent dates available.

Critical violation: Observation (CORRECTED DURING INSPECTION): When tested, the quaternary ammonium compound-based sanitizing solution was observed to be at a concentration less than what is required for effective sanitization of food-contact surfaces of equipment and utensils. Observed the sanitizing solution in the 3 vat sink, and saute station sanitizer bucket with a concentration of less than 150 ppm total quaternary ammonium compound.

Critical violation: Observation (CORRECTED DURING INSPECTION): Due to improper operation of the hot water, mechanical warewashing machine, the thermolabel did not turn black, indicating that food-contact surfaces of equipment and utensils are not being adequately sanitized. Unit is able to heat water to 170F.

Non-critical violation: Observation (REPEAT) (CORRECTED DURING INSPECTION): Dispensing and/or in-use utensils improperly stored between use as follows: tongs on oven handle, fryer scoop on fryer handle.

Critical violation: Observation (CORRECTED DURING INSPECTION): A food employee failed to wash his or her hands before engaging in food preparation, after touching bare human body parts, after coughing, sneezing, eating, after handling soiled utensils, or after engaging in any activity that could contaminate the hands. OBSERVED FOOD EMPLOYEE ENTER KITCHEN TO START SHIFT AND PROCEEDED TO SERVICE LINE TO PUT ON NEW GLOVES WITHOUT WASHING HANDS PRIOR.
