Fairfax County reported violations at Clyde's, M&S Grill, and others, according to inspections from June 13-14.

Critical violation: Observation (REPEAT) (CORRECTED DURING INSPECTION): The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: Ricotta cheese (47F), Egg salad (48F) in 2 Door Prep cooler (salad). Quinoa (47F), sliced tomatoes (50F) in top of 2 Drawer prep cooler (saute). Creme Brulee (45F) in Traulsen 2 Door Upright Cooler. Cheesecake (50F) in Traulsen 2 door Glass Door Cooler.

Critical violation: Observation: The following raw and/or undercooked foods are provided on the menu, menu board, table tent or brochure without proper disclosure: Bacon cheeseburger and clyde's cheeseburger on happy hour menu. Lamb on dinner specials menu.

Cooked chicken (45F), pasta (47F, 45F), sliced tomato (51F), garlic (52F) in 3 DR prep cooler (grill). Hard boiled egg (43F), cheesecake (48F) in 3 DR prep cooler (pantry). Milk on counter in ice (53F).

Critical violation: Observation (CORRECTED DURING INSPECTION): The following raw and/or undercooked foods are provided on the menu, menu board, table tent or brochure without proper disclosure: SIMPLY GRILLED SALMON, TENDER BEEF MEDALLIONS, CENTER CUT FILET MIGNON, USDA CHOICE TOP SIRLOIN, DRY RUBBED BLACK ANGUS RIBEYE, USDA CHOICE NY STRIP, ANGUS RIBEYE ON GLUTEN FREE MENU. BLACKENED SALMON CAESAR SALAD, BONE-IN DRY RUBBED BLACK ANGUS RIBEYE STEAK ON DINNER MENU.

Critical violation: Observation (REPEAT) (CORRECTED DURING INSPECTION): Due to improper operation of the hot water, mechanical warewashing machine, the thermolabel did not turn black, indicating that food-contact surfaces of equipment and utensils are not being adequately sanitized.

Non-critical violation: Observation (REPEAT): The following refrigeration unit is not operating properly and is unable to maintain cold food at or below 41°F: 3 door prep cooler 44F (grill), 3 door prep cooler 44F (pantry)

Non-critical violation: Observation (CORRECTED DURING INSPECTION): Dispensing and/or in-use utensils improperly stored between use as follows: ice scoop was observed with handle in ice. Knives were stored in sanitizer along the prep station.

Non-critical violation: Observation (CORRECTED DURING INSPECTION): Observed that hand soap was not available at the hand sink adjacent to the 3-vat sink.
