Ashburn Health Inspections: Chef Geoff's, Subway, Uncle Julio's

The Loudoun County Health Department recorded violations at several facilities around the Ashburn area during recent inspections.

FREDERICKSBURG, VA — Several facilities around Ashburn recorded violations during health department inspections from Sept. 21 to Sept. 27.

Most COVID-19 restrictions around the state have relaxed, so health inspectors are returning to conduct some restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection

Here are the most recent restaurant inspections in the Ashburn area, according to the Loudoun County Health Department.

  • Eagle Ridge Middle School, 42901 Waxpool Road Ashburn, VA 20148
    • Date inspected: Sept. 21
    • Total violations: 1
      • Date marking not provided to chicken soup and pasta in the reach in refrigerator. Said food had been holding in said unit for more than 24 hours.
  • Montessori Kid's Universe, 20108 Ashburn Village Blvd Ashburn, VA 20147
    • Date inspected: Sept. 22
    • Total violations: 1
      • Observed the blade of the can open protective coating pealing off.
  • Potomac Falls High School, 46400 Algonkian Parkway Sterling, VA 20165
    • Date inspected: Sept. 22
    • Total violations: 2
      • A container of cooked chicken and a container of chicken and rice was observed with no date marking.
      • Boxes of fruit and vegetables were found stored on the floor of the walk-in cooler.

    • Date inspected: Sept. 22
    • Total violations: 1
      • A container of Texas Pete Hot sauce was observed stored on the floor of the walk-in cooler.
  • Kitchen by Wolfgang Puck(The), 1 Saarinen Cir. Dulles, VA 20166
    • Date inspected: Sept. 23
    • Total violations: 1
      • The bar dish machine is not sanitizing properly. The utensil temperature is 149F. Wares are not getting sanitized through the machine.
  • United Airlines Dulles C7, 1 Saarinen Circle Sterling, VA 20166
    • Date inspected: Sept. 23
    • Total violations: 1
      • Several temperature control for safety (TCS) food items such as milk, half and half, sour cream and yogurt registered between 44°F to 48°F in lower selves in the one door reach in refrigerator. Said unit registered operating at 41°F in top two section and above 41°F in the lower half section. Observed the the air not circulating adequately to the bottom half of the unit. As per the PIC said food had been held in said unit for more than a day.
  • Forest Grove Elementary School, 46245 Forest Ridge Dr Sterling, VA 20164
    • Date inspected: Sept. 23
    • Total violations: 1
      • Observed all 3 hand sinks to be incapable of generating water to 100F including: Hand Sink by the Office 80F max temp, Automatic Hand Sink by 3 VAT 79F max temp, and Hand Sink by Dishwashing Machine 77F.
  • Subway Sandwiches & Salads, 156-K Enterprise Street Sterling, VA 20164
    • Date inspected: Sept. 23
    • Total violations: 7
      • PIC informed inspector that Cold Holding Unit at Line freezes over and must be turned off periodically to prevent freezing and allow for adequate cold holding.
      • Observed Soup Hot Holding at 45F at the Line.
      • Observed Soup Hot Holding at 45F in the Hot Holding area of line.
      • Observed no means of drying hands at handwashing station at front line.
      • Observed there to be no hand soap at the hand washing sink at the front line.
      • Observed no handwashing sign at the hand washing station at the line.
      • Observed: Employee/PIC does not have a verifiable means to show certified food protection manager (ServSafe) certificate.

    • Date inspected: Sept. 23
    • Total violations: 2
      • Meatballs in marinara sauce not heated adequately prior to placing them in the hot holding table. Said food registered at 60°F in hot holding table in front food prep area.
      • Cheese, tuna salad, ham, turkey and mozzarella cheese in sandwich prep cooler registered between 44°F to 46°F. As per the PIC said food were left open during lunch rush.
  • Chef Geoff's, 1 Saarinen Cir. Dulles, VA 20166
    • Date inspected: Sept. 24
    • Total violations: 6
      • Handwashing facility next to 4 door reach in refrigerator in kitchen observed without paper towels.
      • Chemical dishwasher in kitchen and in bar observed not sanitizing after washing and rinsing. Said dishwasher observed not sanitizing adequately.
      • Raw salmon and raw calamari registered at 52°F to 58°F in the four drawer low boy refrigerator in front of the grill and fryer in the kitchen. Said unit was not closed properly and registered operating at 56°F.
      • Raw burger patties, cooked chicken, grilled chicken, cheese and raw shell eggs registered at 45°F in low boy refrigeration units in front of grills.
      • Large container of chicken wings registered at 52°F in the low boy drawer refrigerator. Said food had been in said location for more than 3 hours. Said unit holding food at 56°F.
      • Cutting boards on top of low boy refrigerators in the kitchen observed dirty/discolored with deep stained cut marks.

    • Date inspected: Sept. 24
    • Total violations: 2
      • Food handlers observed without hair restraint.
      • Two light shields observed cracked.

      • Manager could not locate employee health paperwork.

      • Handwashing facility at the bar observed with several speed pourers placed in said sink.
      • Three fruit flies observed in a whiskey bottle on shelf at the bar.
      • White queso registered at 124°F on hot holding table in kitchen.
      • Several live flies and fruit flies observed in dishwashing area, soda line area in rear dry food/goods storage section in kitchen and in dining area.

    • Date inspected: Sept. 27
    • Total violations: 2
      • Avantico 2 door under counter refrigeration unit cold holding at improper temperatures.
      • The non-food contact surface of the 2 door stand up refrigerator in the back room are not cleaned at an appropriate frequency to prevent accumulation of dirt, residue, and/or debris.
