Today's recipe - Cozmo's Crazy Pork BBQ

Ah spring time is in full swing and summer is almost here. I can almost feel the heat coming off of the grill. One of my favorite summer time recipes involves several different cooking methods. If you dig the pig like I do then you're gonna love this recipe.

5 lbs. pork roast
1/2 cup butter
2 cups tomato juice
2 cans crushed tomatoes
1 can tomato paste
1 tsp. liquid smoke
1 tbsp. worchestershire sauce
1/4 cup honey
1/4 cup honey dijon mustard

2 cups apple juice

2 tbsp. vinegar
2 tbsp. salt
1 tbsp. black pepper
2 tbsp. garlic powder
1 tbsp. cumin
4 tbsp. chili powder
1/2 tsp. hot sauce
1 large onion, finely chopped
1 large, green apple, skinned, cored and finely chopped

Melt the butter in a large pot. Add salt, pepper, garlic, cumin and chili powder to the melted butter. Saute the chopped apple and onion in the spiced butter. Stir in the vinegar and hot sauce. Continue stirring while you add everything else to the pot except the pork roast. Cover the pot and reduce heat to a simmer. Stir the sauce periodically.

Now it's time to crank up the grill. Bring it up to temp and throw a few wet hickory planks onto the fire. Lay your pork roast onto the grill and cook it slowly to medium rare. Turn the roast only once during the grilling process to get a good sear on both sides. Don't fuss too much with it. Remove it from the fire and let it cool to room temperature. Shred the pork into fine slivers and throw it into your pot of sauce.

The hard part is waiting long enough to let the pork cook completely. It'll take an 1 1/2 - 2 hours on simmer to get there, but, you'll know the wait was worth it when you taste the results.  Stir the barbecue periodically to keep it from sticking.

Serve Cozmo's Crazy Pork BBQ on onion rolls with some slaw for a mouth watering experience.
