Today's Recipe - Cozmo's Kill'r Catfish
Well boys and girls, we've been talking about grill recipes. But, with the rain we're having this week I thought we'd stay inside and cook some fish. Alot of cooks shy away from seafood thinking that there's some kind of secret to cooking it. Alot of foodies shy away from eating it because they don't like the "fishy" taste. Well, there's not really a secret, but, I do have some hints stashed around this recipe that will help you make your seafood experience as grand as the sea itself. Since I am orginally from the mountainous side of Virginia I thought I'd share one of my favorite catfish recipes with you. This one can be used with nearly any kind of fish though, so, don't be shy, hop in the kitchen and let's get to it.
6 boneless, skinless catfish filets
3 cups buttermilk
1 tsp. salt
1 tsp. black pepper
1/2 tsp. red pepper flakes
1 tsp. garlic powder
1 tsp. old bay seasoning
Butter
1 medium onion, finely chopped
1 green pepper, finely chopped
1 cup button mushrooms, finely chopped
Lay your boneless, skinless catfish filets into a large, glass baking dish. Sprinkle salt, black and red pepper, garlic powder and your old bay onto both sides of each filet. Slowly pour buttermilk over the filets, cover the dish with plastic and refrigerate overnight.
Preheat your oven to 350 degrees. Drain the liquid from your filets. Butter the filets and cover them with chopped onions, green peppers and mushrooms. Cover the baking dish with aluminium foil and place it into the oven. Bake the fish for 45-50 minutes, remove the foil and continue cooking until flaky and golden brown.
Mmmmmmm good... Add some twice baked potatoes on the side and you have an amazing meal. That's all there is for now; pop in next week when we hit the kitchen to make some quick summertime snacks. Till then - have fun cooking, enjoy your fish, and keep smiling...
