Prince William Restaurant Inspections: Live Roaches, Sewage

During recent restaurant inspections, the Prince William Health District cited violations at several locations, including one with roaches.

PRINCE WILLIAM COUNTY, VA โ€” Inspectors found live roaches at a restaurant in Woodbridge during a recent inspection, according to the Prince William Health District. This was one of several violations observed by inspectors during restaurant inspections around the county.

Though some coronavirus restrictions continue to fluctuate around the state, health inspectors are returning to conduct many restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

  • Sushi Jin, 14901 Potomac Town Place, Suite 135 Woodbridge, VA 22191
    • Date inspected: Nov. 10
    • Total violations: 10
      • The food establishment does not have written procedures for cleaning up vomiting or diarrheal events that happen in the facility.
      • A food employee was observed cleaning their hands in a food preparation sink.
      • Observed employees directly contacting exposed ready to eat food with their bare hands in a manner that could contaminate the food.
      • The handwashing sink was observed being used for purposes other than handwashing.
      • Ready to eat foods prepared and held in the food establishment for more than 24 hours is not clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded.
      • No written procedures for the use of time as a public health control with potentially hazardous foods. Observed rice at sushi station in container not using hot holding.
      • The certified food manager could not provide a small diameter food temperature measuring device. Also observed missing ambient thermometers in prep coolers while Walk-In cooler displayed 45*F. All food contents measured proper temperatures in cold holding.
      • Harborage conditions exist for cockroaches. Live roaches observed when removing the handsink soap dispenser to add liquid soap.
      • The nonfood contact surface of the kitchen area walls, floors, and grills had accumulations of grime and debris.
      • Sewage is being dumped on the ground surface.

      • The food-contact surfaces of the following equipment and/or utensils are not resistant to corrosion
      • Wet mop is not placed in a position that allows it to air-dry without soiling walls, equipment, or supplies.

    • Total corrective actions: 7
      • Install shelving above the 4 compartment sink for air dry and store clean equipment and utensils.
