Woodbridge Health Inspections: 15 Violations At Buffet
Several facilities in Woodbridge recorded violations during the most recent round of inspections from the county health department.
WOODBRIDGE, VA — Several facilities recorded violations during recent inspections from Prince William County's health department. The most recent inspections occurred between Nov. 7 and Nov. 14.
COVID-19 restrictions have mostly disappeared around the state. Health inspectors conduct most restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

- The person in charge (PIC) is not able to demonstrate the systems to control risks to food safety. Written procedures have not been put into practice or maintained. Some foods found out of temp - see 9 and 14 "9. Employees are properly maintaining the temperatures of time/temperature control for safety food during hot and cold holding through daily oversight of the employees routine monitoring of food temperatures;Pf" "14. - There is no Northern Virginia Certified Food Protection Manager on duty during hours of operation.
- Open drinking containers stored in a manner that may contaminate food, food contact surfaces or utensils. Employee observed drinking from an open cup with no lid or straw while in kitchen.
- Observed food employees using improper handwashing procedures - Various employees observed both not washing hands when switching tasks (moving food, washing dishes and taking out trash) and some only changing gloves.
- Observed food employees using improper handwashing procedures - Employee/s observed washing hands in food prep sinks (due to hand sinks being blocked)
- All hand sinks have various clutter such as cooking utensils, dishes and cleaning products stacked in the basin. Sinks completely blocked - hands can not be cleaned.
- Raw food observed in uncovered containers - chicken, shrimp, salmon, tilapia, beef - These bins must be covered unless "cooling". 4. Except as specified in subsection B of this section and 12VAC5-421-810 B 2, storing the food in packages, covered containers, or wrappings;

- Total violations: 13
- Employees are not aware of the reporting procedures concerning information about their health and activities as they relate to diseases that are transmissible through food.
- The handwashing sink next to the 3-compartment sink is used as storage.
- Observed raw animal food stored over ready-to-eat (RTE) food in the walk-in cooler. Raw eggs, raw chicken wings, raw tilapia stored over cooked chicken wing, beef stew and lettuce.)
- Observed cooked chicken, and black beans are not covered in the walk-in cooler.
- Observed different types of raw animal foods stored in such a manner that may cause cross contamination as follows: Tilapia stored next to raw chicken in the walk-in cooler).
- Observed cooked pasta, Pico de Gallo, mozzarella cheese, and Cole slow at cold holding at improper temperatures.
- The prepared ready-to-eat (RTE) such as rotisserie chicken, pinto beans, beef stew in the refrigeration unit is not properly dated for disposition.
- Wiping cloths are not properly laundered.: Observed dirty wiping cloths on the shelves next to the 3 comp.
- Employees observed working in the food service area without proper hair restraints.
- The nonfood-contact surface of the walk in cooler is not cleaned at an appropriate frequency.
- There is no chemical sanitizing test kit present to ensure the chemical sanitizing solution used is at the proper concentration.
- Observed a broken back flow prevention device.
- Observed that mops are improperly stored between use.

- Observed food employee dump dirty water in the handwashing sink.
- Observed 2 cutting boards on the tops of both prep coolers dirty, not clean to sight and touch.
- Observed cut tomatoes, ground sausage, turkey sausage, diced ham, sliced tomatoes cold holding at improper temperatures.
- Observed food such as cooked chicken in the container that does not bear a date or day of preparation for proper disposition.
- Methods used for cooling cut tomatoes were not adequate.
- Observed food employee dump dirty water in the prep sink.
- Wiping cloths improperly stored between use, not in chemical sanitizing solution, in the following locations.
- Observed a non-working refrigerator in the back inside the kitchen.
- Observed the refrigerator next the hot holding unit in the front with cold holding reading temperature of 49 F.
- Observed an electrical cable hazard on the floor in the kitchen,
