Woodbridge Health Inspections: 24 Violations At 1 Restaurant
The Prince William Health District inspected several facilities around Woodbridge and Dumfries during recent restaurant visits.
WOODBRIDGE, VA —Several facilities around Woodbridge recorded violations during the most recent round of health department inspections from March 1 to March 7.
Most COVID-19 restrictions have relaxed around the state, and health inspectors are returning to conduct many restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

- Observed employees were working in the food service area without proper hair restraints.

- Commercially prepared meat balls @125 degrees F in the steam table. Per CFPM, meatballs were reheated on the grill prior to placing in the steam table.
- Employees handling food were observed to not be wearing proper hair restraints.
- Single service, carry out containers, were stored directly exposed to possible contamination from patrons as they pass by to go to the restrooms. (Plates and condiments were also stored exposed to patrons.)
- The 3 compartment sink is in disrepair and the compartments are not capable of holding water without the use of items such as bags, etc to help prevent the water from draining.
- Extensions have been placed on the original wastewater pipes of the 3 compartment sink so that they now extend down into the floor drain, eliminating the air gaps.

- The Person In Charge (PIC) was not able to provide documentation that all food employees or conditional employees were trained and informed of their responsibilities to report symptoms or diagnosis of, or exposure to, diseases transmissible through food.
- This food establishment has not established written procedures for responding to vomiting or diarrheal events that happen in the facility.
- There was no soap available at the handwashing sink near the walk-in cooler.
- The handwashing sink along the cookline was being used to wash and/or rinse equipment in it (lexan container lid found in handwashing sink).
- Ice cream cakes in walk-in freezer stored uncovered (from yesterday); container of pecans in walk-in cooler stored uncovered.
- Raw eggs (personal item) stored over ready to eat (RTE) foods in 2 door sandwich prep refrigerator.
- Commercially prepared chili at 81 degrees F, gravy at 113 degrees F and hot dogs at 124 degrees F being reheated in the 3 bay Winco hot holding unit.
- The following food item(s) were observed hot holding at improper temperatures using a calibrated food temperature measuring device: hamburgers in lexan tray in hot holding unit @ 125 degrees F.
- The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: cut lettuce @ 46 degrees F and shredded cheese at 49 degrees F on top of 2 door sandwich prep refrigerator; shredded cheese inside 2 door sandwich prep unit @ 51 degrees F.
- Spray bottle of chemicals stored near single service items (cups) and salt/pepper in front service area.
- There were no ambient air temperature measuring devices (thermometers) in the Norlake freezer or the 2 drawer freezer.
- Foods (chili, gravy, hot dogs) being held in the Winco hot holding equipment are subject to contamination from the closely adjacent handwashing sink/soap dispenser.
- Employees handling food were observed to not be wearing proper hair restraints.
- The wet wiping cloths along the cook line were not properly stored in the sanitizer bucket in between use.
- Knife at sandwich prep refrigerator improperly stored in between usage in between lid and food storage area.
- Single service paper/cardboard ice cream cup being continuously used to scoop pecans.
- Single service containers were stored with the food contact surfaces directly exposed to possible contamination.
- The following refrigeration unit in the kitchen was not holding a temperature of 41 degrees F and below: 2 door sandwich prep reach-in refrigerator.
- Observed milk crates being used as shelving for food in the walk-in freezer and for single service storage throughout kitchen.
- Cardboard (soiled) being used to line shelving, dunnage racks.
- There is a "Y" adapter on the faucet at the mop sink that allows 2 hoses to be attached. One hose was observed to be fully extended into the mop sink. Mop sink faucet vacuum breakers are not designed for the continuous pressure created by the "Y" adapter/hoses.
- Extensions have been placed on the original wastewater pipes of the 3 compartment sink so the pipe from the wash compartment extends down into the floor drain, eliminating the air gap.
- There is a huge amount of debris build-up on the floor in the walk-in cooler (WIC).
- Adequate lockers or other suitable facilities are not provided for employees clothing and other possessions resulting in personal items being stored on shelving used for single service items, foods, etc.

- There is no Certified Food Protection Manager (CFPM) on duty during hours of operation as the employee with supervisory and management responsibilities in the kitchen only has a Food Handlers certificate (State Food Safety).
- The integrity of the food packaging for a can of Regal Pineapple Tidbits was found to be compromised (severely dented along the end seam) and therefore exposing the food to potential contamination.
- Containers of hot dogs thawing at room temperature at the 3 compartment sink.
- Hot dog buns stored adjacent to handwashing sink.
- An extension has been placed on the original wastewater pipe of the 3 compartment sink so that it now extends down into the floor drain, eliminating the air gap.

- There was no verifiable employee health policy available at the time of the inspection.
- There was no procedure/bodily fluid kit available during the inspection to show how to clean vomit and diarrhea.

- There is direct connection to the clean water supply and a grey water disposal.
