Restaurant Cited For 43 Violations: Woodbridge Health Inspections
Recent inspections of restaurants in the Woodbridge area included a restaurant with 43 violations, one of which was a grease fire hazard.
WOODBRIDGE, VA — Several facilities in the Woodbridge area recorded violations during recent health department inspections between Feb. 16 and 27.
Health inspectors conduct most restaurant, school, child care center and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.
For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

Here are the most recent inspections from the Woodbridge area, according to the Prince William Health District. Of note, El Ranchon Steakhouse had 43 violations, including food and grease debris that could cause a fire hazard. The restaurant is having a follow-up inspection later in March.

- The person in charge did not perform the following duties: 1. Ensure that employees are effectively cleaning their hands, by routinely monitoring the employees' handwashing; 2. Ensure that employees are properly maintaining the temperatures of TCS foods during both hot and cold holding.
- This food establishment has not established written procedures for responding to vomiting or diarrheal events that happen in the facility.
- Drinking containers were stored (on the food prep table) in a manner that may contaminate food, food contact surfaces or utensils.
- Observed a food employee attempt to wash her hands at the 3 compartment sink and in a bucket at the 3 compartment sink.
- Food employees failed to wash their hands when changing tasks in the kitchen. Observed a food employee rinse off her gloved hands at the 3 compartment sink.
- There was no soap available at the handwashing sink along the cookline or at the handwashing sink near the 3 compartment sink.
- The handwashing sink near the warewashing machine was being used to rinse equipment such as the knife found there; the handwashing sink near the cookline had evidence of dumping food/colored liquids in the sink.
- No disposable hand towels were available at the handwashing sinks near the cookline or the 3 compartment sink.
- The handwashing sink originally located in the bar area has been removed.
- Bowls being used as scoops in bulk containers of food.
- The CMA 180 stationary low temperature warewashing machine was in disrepair with the concentration of chlorine measured at 0ppm.
- Equipment throughout the kitchen including refrigeration units, prep tables, cooking equipment, etc was soiled with visible debris.
- The following food item(s) were observed hot holding at improper temperatures using a calibrated food temperature measuring device: large pot of Chicharron on counter top overnight @ 76 degrees F.
- Containers of food held for > 24 hours were not date marked.
- Containers of food were not marked with the date to be discarded.
- Buckets of paint stored on shelving with single service items.
- Hydrogen peroxide, 1st aid supplies were stored in shelving with single service items.
- There were no ambient air temperature measuring devices (thermometers) in the following refrigerators: 2 door reach-in refrigerator, Imperial chest freezer.
- The person in charge (PIC) could not provide a metal-stemmed probe food thermometer that was capable of measuring food temperatures.
- Observed white bulk containers of food that were not labeled properly with the common name of the food.
- Vase of roses stored on preparation table where meats were being cut.
- Employees handling food were observed to not be wearing proper hair restraints.
- Clean equipment including pots and pans were stored on the shelving with the food contact surface exposed to dust and other contamination.
- Various single use containers such as white buckets, foil containers were observed to be washed, stored with clean equipment and ready to be reused to store other foods in.
- The following equipment is in disrepair: 1. the interior of the ice machine is discolored and rusted.
- There is a large build up (a "waterfall") of ice in the walk-in freezer near the compressor.
- The following refrigeration units along the cookline were found to be in disrepair: 4 drawer reach-in refrigerator, 3 door prep/reach-in refrigerator.
- Milk crates are being used as shelving in the walk-in coolers.
- Foil is being used to line shelving throughout the kitchen.
- Wooden cutting boards being used as the surface on which raw meat is cut.
- There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solution (chlorine).
- The exterior of the equipment (refrigerators), shelving, etc in the kitchen was sticky and had visible soil residues.
- Extensions (cups) have been placed on the original wastewater pipes of the 3 compartment sink near the warewashing machine so that they now extend down into the floor drain, eliminating the air gaps.
- The wastewater pipes at both the 3 compartment sinks are in disrepair and leaking. Staff was observed "sweeping" water to another nearby floor drain.
- Wet mop observed stored improperly.
- Other items such as the drum kit, other sound equipment, space heaters and many unnecessary items were also found/stored throughout the kitchen making it difficult to organize and keep clean.
- The floor in the bar area is in disrepair.
- Light fixtures throughout the kitchen, including in the hood system, are in disrepair or missing all together.
- The ceiling throughout the kitchen is in disrepair and has obvious water damage and is unstable and/or missing in places. The ceiling in the women's restroom is in disrepair and unstable.
- Maintenance tools (such a a bench grinder) are not being stored in a way that prevents the contamination of food, equipment, utensils,linens, and single-service items (stored on table with foods, etc).
- Walls, floors, etc at the hand sinks, 3 compartment sink, mop sink, food prep area and throughout the entire kitchen are unclean with visible soil. There is a large amount of food and grease debris around the deep fat fryers that could result in a fire. Ceiling vents have visible build up of dust and debris.
- Adequate lockers or other suitable facilities are not provided for employees' possessions such as coats, purses, phones, etc resulting in personal items being stored on food contact surfaces, shelving, etc throughout the kitchen.
- Observed that inadequate lighting was provided in the food preparation areas (11.4 foot candles).
