Woodbridge Health Inspections: Margaritas Grill, Taqueria El Sabor

The Prince William Health District inspected several facilities around Woodbridge and Dumfries during recent restaurant visits.

WOODBRIDGE, VA — Several facilities around Woodbridge recorded violations during the most recent round of health department inspections from Feb. 1 to Feb. 7.

Most COVID-19 restrictions have relaxed around the state, and health inspectors are returning to conduct many restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

      • There was no verifiable employee health policy was not available at the time of the inspection.
      • An employee was drinking from an unlidded cup at the prep table.
      • There was a container of rice that was not closed/sealed under prep table.
      • There was shell eggs that were over top of ready to eat vegetables.Corrective Actions: Please rearrange the foods so that the raw foods are on the bottom or below ready to eat.
      • There was cabbage that was cooked the day before red cabbage (47F) and orange cabbage (46F).
      • The sanitizer bucket was measured above 100 ppm.
      • There was a bag of onions on the floor.
      • There was an employee that was not wearing a hair restraint.
      • There was a sour cream container that was being reused to hold red cabbage. Also there was a single service container that was in rice.

      • Coat observed to be stored on the shelving in the dry storage area with single service items.

      • No test kit for dishwashing machine.
      • The nonfood-contact surfaces of the following equipment were observed soiled with an accumulation of dust, dirt, food residue, and/or other debris: cutting boards.
      • Floor tile damage in kitchen.
      • Ceiling tiles in kitchen damaged.
      • Less than 10 foot candles of light was noted in the walk in cooler.

    • Total violations: 2
      • No soap at hand sink.
      • Ice used as a medium for cooling the exterior surfaces of food is also for drink ice or used as food.
  • Margaritas Grill, 4331 Dale Blvd. Woodbridge, VA 22193
    • Date inspected: Feb. 7
    • Total violations: 16
      • The Person In Charge (PIC) was not able to provide documentation that all food employees or conditional employees were trained and informed of their responsibilities to report symptoms or diagnosis of, or exposure to, diseases transmissible through food.
      • This food establishment has not established written procedures for responding to vomiting or diarrheal events that happen in the facility.
      • Signage that notifies food employees to wash their hands was not provided and/or permanently affixed at all handwashing sinks used by food employees (handwashing sink in the bar area. handwashing sink in cook area).
      • There was no soap available at the small handwashing sink along the cookline.
      • Raw eggs stored over ready to eat (RTE) cooked rice in the walk-in cooler (WIC).
      • The chlorine sanitizing solution dispensed in the ET series stationary low temperature warewashing machine was not at an acceptable concentration. A fresh bottle was added, but the concentration was still measured at 0ppm chlorine.
      • The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: horchata @45 degrees F, over 24 hours; sliced tomatoes @ 43 degrees F, cut last night.
      • Chemicals (peroxide, oil, crazy glue) were stored near foods in the kitchen.
      • Sliced tomatoes that were cut the night before were stored on top of the Everest 2 door prep/reach-in refrigeration unit at 43 degrees F.
      • Several bottles of clear liquid at grill unlabeled with name of contents; bulk food containers not labeled with name of contents.
      • Food (meats) stored on the floor in the walk-in cooler.
      • Dispensing or in use utensils along the cookline were observed to be improperly stored in between usage in standing water at 125 degrees F.
      • Plastic milk containers (gallon size), butter containers (tubs), sour cream buckets and spice containers (oregano) being reused to store other foods in throughout the kitchen.
      • There is no data plate on the warewashing machine.
      • The wastewater pipes of the 3 compartment sink at the bar area and the wastewater pipe at the 1 compartment prep sink extend down into the floor drain, eliminating the air gaps.
      • The overhead light fixture in the bar area is in disrepair and not providing any light.
  • Don Sebas Taqueria, 3908 Prince William Pkwy Woodbridge, VA 22192
    • Date inspected: Feb. 7
    • Total violations: 8
      • An employee was eating with gloves on in the kitchen eating.
      • The hand sink in the bar was temp at 87F and the female bathroom was 76F.
      • There was birria 43F, raw beef 46F & 45F, raw chicken 45F in cold holding that has been in cold holding since at least Sunday.
      • There were several food items out of temperature and person in charge how they cooled those foods and it was incorrect.
      • There was a spoon in room temperature water and a spoon in hot water at 133F.
      • There was food containers that were stacked on top of each other without them being properly dried before storage.
      • The 3 compartment sink and the ice machine were not properly air gapped.
      • There were coats and other personal items near the clean dishes.

    • Total violations: 2
      • Observed employees were working in the food service area without proper hair restraints.
      • There are refuse litterings outside the dumpster which may attract rodents and pests.

      • There is no person in charge with a valid Food Protection Manager Certification from an accredited agency recognized by the Conference for Food Protection.
