Woodbridge Health Inspections: Roaches Found At Steakhouse
The health department recorded violations at several restaurants and schools around the Woodbridge area during recent inspections.
WOODBRIDGE, VA — Several Woodbridge area restaurants and schools recorded violations during inspections between Sept. 7 and Sept. 13, according to the Prince William Health District.
Most COVID-19 restrictions have relaxed around the state, and health inspectors are returning to conduct many restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

Poisonous or toxic materials shall be stored so they cannot contaminate food, equipment, utensils, linens, and single-service and single-use articles by: Locating the poisonous or toxic materials in an area that is not above food, equipment, utensils, linens, and single-service or single-use articles. - Food storage. A. Except as specified in subsections B and C of this section, food shall be protected from contamination by storing the food: At least 6 inches (15 cm) above the floor. Food in packages and working containers may be stored less than 6 inches (15 cm) above the floor on case lot handling equipment as specified under 12VAC5-421-1420. - Nonfood-contact surfaces. Surfaces such as cutting blocks and boards that are subject to scratching and scoring shall be resurfaced if they can no longer be effectively cleaned and sanitized, or discarded if they are not capable of being resurfaced. O: The cutting boards are heavily scratched, scored, stained and absorbed food, they are no longer easily cleanable.

- There was no temperature measuring device located in the walk in refrigerator.

- All surfaces located in walk-in-freezer are covered in cross contamination due to constant thawing, condensation build-up and then re-freezing.

- There is a "Y" adapter on the faucets at the mop sinks (upstairs and downstairs) that allows 2 hoses to be attached. Mop sink faucet vacuum breakers are not designed for the continuous pressure created by the "Y" adapter/hoses.

- Cutting board being stored on floor leaned up against 3VAT sink and is subject to cross contamination from both the floor and splashing from 3 VAT sink.
- Walk-in-refrigerator door has no latch and will not seal properly unless wedged closed.
- 3 VAT sink will not hold water in any of the compartments. Plastic bags being used to clog drains in order to maintain water levels in 'wash-rinse-sanitize' vats.
- 2 bulbs burned out in Hood over grill. 1 protective cover also missing from bulb.
